My wife just made this for dinner, she substituted potatoes for the rice, it tastes wonderful. Perfect for a freezing cold upstate NY evening!

Spinach is extremely high in oxalates this is a problem for many, I would substitute kale.

Thanks for the comment! Yes in the written recipe I discuss how you can use any green- the more greens the better in my book!

There is no soup called mujadara. It's a rice and lentils meal. Not watery.

However this soup is a good idea but don't call it mujaddara

Thanks for your input- My grandmother who immigrated from Lebanon in 1913 taught me how to make Mujadara- so this is in fact an authentic Lebanese recipe- If you watch the video I explain how this particular iteration is different including the thickness- Best- Cat

There are myriad ways of making things, often differing in each region or even family. This may not be your way, but that isn't relevant to others' versions.

@SheliaR.08- yes agree- I was just speaking to another Lebanese friend about how her family recipes differ from mine :)

@@catsvegankitchenI was just talking today about how even a small country like Denmark has different recipes from region to region.
People have asked me since I’m half Danish if I’ve had æbleskivers, a sort of pancake ball, and are shocked when I say no because it just wasn’t prevalent in my mother’s town.
