In the next episode I am going to be making Southern style pintos and cornbread! Drop any other ideas or suggestions here if you want me to try anything!
You should make the North Carolina version too! Please 😊
Swedish meatballs - some pretty good and simple ones out there as well.
Great recipe for someone who is a vegetarian...I enjoy lentils in a soup but have never thought of it as a main meal!! Can't wait to try😊❤❤
A really delicious, simple and cheap meal is recipe from Spain called Arroz a la Cubana or Cuban Rice. Simply make some white rice, heat up a can of tomato sauce, not pasta sauce, just pureed tomato sauce and fry up two eggs. Pour the tomato sauce over the rice and top with the eggs. Break the yokes and stir everything together and season with salt and pepper. It's super filling and tasty! Give it a try some time. I learned to make this when I lived in Spain. It's delicious and very budget friendly!
I love to substitute lentils for the beans in a baked bean recipe. Makes a great side dish and bulks up protein in your meal.
All these other content creators are great, but there’s no one on UA-cam like Rebecca. This account is as realistic as it gets! Rebecca is transparent in all her meals, if she makes a mistake, she doesn’t edit it out, and she’s not on here trying to sell anything to her subscribers. Her recipes and budgeting ways have helped me get through some difficult times, so THANK YOU!
While I don’t mind sponsors, and don’t want to judge someone for their hustle-sometimes the sponsors on the larger budget channels are very out of touch with their audience. IE expensive services like hello fresh, butcher box, and thrive market.
Rebecca is hand down the most authentic and conscientious content creator!
@@bobstubesocks I recently learned a sponsored video pays about the same as a month of regular videos. Just so long as it fits the audience (like you described), I don't mind them. Bills don't pay themselves, amirite?
Yum
At dollar tree the mint tea bags are just dried peppermint leaves. I have used them in recipes in a pinch if I don’t have fresh mint.
Great tip!
I was wondering about that, thanks!
I have done this. Game changer!
Good idea!
I never thought of doing that thank you.
My Lebanese hubby was impressed with your $100 month challenge so imagine his delight when I told him what your very next video was! Well done. It's a different technique than what his family makes but looks just as delicious!
That is awesome! I’d love to know what his family does differently
@@DollarTreeDinnersme too!
Me too!
@@DollarTreeDinnersanother version is Egypts national dish. Lentils, elbow macaroni, rice, fried onion, some kind of tomato sauce on the side or over the top. Just a little bit. I was a single mom, this was a go to inexpensive meal for us.
@@evamariegehrke8595 you mean Koshari. You can use spaghetti broken up as well and it's usually a chilli sauce.
i dont comment very often but i wanted to show some love, mjaddra was one of the default recipes in my home growing up
I've never tried the Lebanese version, but my first intro to lentils and rice was in college. A friend heated Progresso lentil soup and poured it over rice. It was such a modest meal, I think she was embarrassed, but we were just hanging out at that's what she was fixing for herself. It was so good! I even took that meal to my boyfriend when he was sick because I didn't have anything else quick to grab. Afterward, he said that bringing him a meal that day made him think I was marriage material. We've been married for 10 years! (He said he wasn't as much a fan of the lentils as I was, but it was the gesture that he liked.)
I love that you try dishes from different cultures and acknowledge that while you may not be an expert on the traditional taste/preparation, you still are incredibly respectful and do research into how to best prepare the dish while keeping it cost-effective. It's also cool to see how you use the basics to prepare these types of dishes, too.
Thanks for showing us how to spice up even the basics!
If you have even the teeniest green thumb, you can buy (hideously expensive) packaged mint, take them from the package, and set the stalks in a glass of water on a sunny window sill. In about 2-3 weeks they will sprout roots. You can then plant them in a pot and keep it by your door (if you have a balcony) or in the back yard (if you have access to a yard). Or just have the mint plants live on your windowsill at your fingertips!
I guess you could say i am a budget gardener, because that is how I acquire a lot of my plants (herbs and veggies too)! You can regrow green onions like that, and if your potatoes grow sprouts, you can plant them too, and get more potatoes! All you need is a bucket with holes poked in the bottom to hold dirt. Or a laundry basket, or a cardboard box, even...
I've been doing the green onion trick for like 10 years. There was a period of about 5 years where I never bought green onions, because I could just go into the yard and clip some for myself. 😂
Thank you for the videos. Sending good vibes from California! 😀
Frugal Fit Mom is also a great one! She’s great with teaching how to shop clearance and use what you may already have in your pantry!
I love Frugal Fit Mom!
Yes she is!
I love her as well.
Also love See Mindy Mom.
That girl Lisa Dawn is wonderful as well.
@stephaniebaker4024 yes I watch all 3. They all know their stuff! JaMerrill is great too👩🍳
I heard she was a little problematic
I love mujadara! My ex made it for me and.... He..... Didn't know how to make it. I remember it had tomatoes and Italian dressing???? But it was, at its core, lentils and rice (I forget if he used onions), and I loved it. Years after we broke up, I remembered it and wanted to make it, and googled the recipe. Boy was I surprised to find you don't need Italian dressing or tomatoes. Idk what he was thinking. It wasn't really mujaddara, but it led me to it. Lol.
This is a fantastic cheap meal! Also shout out to feel good foodie, I love her channel too!! 😊😊😊
I ADORE southern frugal momma, ardent Michelle, Lisa dawn, and see Mindy mom. Looks like we run in the same circles! And Frankie's struggle meal series is a huge inspiration : )
While I enjoy using your channel for inspiration, as a vegan it’s rare to find an actual recipe I can make. So thanks! I love lentils. A good way to stretch leftovers, is to add quick oats and bbq sauce to leftover lentils/rice/onions and pack it into a loaf pan and bake it like a meatloaf - in veganspeak a neat loaf.
I veganize so many of her recipes!
Hello fellow vegans I’m glad I’m not the only one watching her make recipes I don’t eat 😅 grocery outlet is a great store for clearance vegan products since I usually don’t really find clearance vegan stuff at the regular stores
@@misspeaches1144 I agree. I have three ‘bent and dent’ outlet stores near me and it always surprises me how much brand name, organic and even gluten-free vegan food I can get for pennies on the dollar.
@@misspeaches1144 my daughter is a vegan and loves shopping at Grocery Outlet plus they have so many items my husband and I like
I’m vegetarian, and I love when she posts recipes that I can actually eat. Although so many of her recipes can be easily adapted to fit any vegan diet.
Looks delicious! Try wringing out your cucumbers before adding them. If I can’t find Greek yogurt, I strain regular yogurt and add dill. Also, try fluffing rice with a fork instead of stirring it. I’m definitely trying this recipe this week! Love your videos and you and Southern Frugal Momma should do a collab! Y’all are my favorites!
I recently tried lentils because of Ardent Michelle suggestion. I found that I really enjoy them. I also didn't grow up eating or even knowing about lentils. The traditional spices aren't for me either. I suggested a rice and lentil with tomatoes on your last video as a side dish for a $5 meal. I have also been adding some to my soups to bulk them up. 😋
Thanks for sharing!! I’ll have to try that as well
I cook my rice separately in the instant pot first and remove. Then I throw the lentils into the instant pot with broth, red pepper flakes, a lot of garlic, onions, turmeric (for color mostly), salt. 20 minutes and your set! I serve the lentils over the rice. There is something about this I can just eat it for days. I am not a lentil person, but the garlic really changes the flavor profile.
A cheap meal I recently learned is the Bahamian dish called fire engine. Its usually a breakfast food but me and my partner usually eat it for dinner. It's essentially diced onion and peppers with corned beef and tomato paste. It's served with or over white rice or grits. My partner is from the Bahamas and his mother reminded him of the recipe when we were struggling to find good meals to eat when I was between jobs.
Your recipes often Saves me. maybe someone here likes my lentil patty recipe: Aunt Maggie's lentil burger patties (if nothing goes wrong visually, there might be a picture later)
100 g red lentils
50 g onions
1 garlic clove(s)
100 g oat flakes
2 tbsp tomato paste
For the lentil burgers, cook the lentils with vegetable stock according to the instructions on the packet until soft. Drain and collect the dripping liquid. Peel the onions and garlic clove(s) and chop finely.
Boil 2 tbsp oil in a pan. Sauté the onion and garlic in it until soft. Mix the lentils with the oat flakes, tomato paste, onions and garlic to form a mushy mass. Add a little more dripping liquid if necessary. Stir in the coriander and season with salt and pepper. Form four patties with moistened hands.
Heat 3 tbsp oil in a coated pan. Fry the patties on both sides for approx. 6 minutes.
My husbands mom introduced me to Lentils and they are from Peru. They do the same as the recipe you did with the onions but with different seasonings. She uses salt, a beef bouillon cube and bacon. It’s super simple, served over rice also. Very cheap, makes a lot and freezes beautifully! Love that you are trying new things ❤
Townsends is also a really great YT channel with lots of cheap cooking content, although from a very unique perspective. It's focussed mainly on living in the US in the 1700s, when most people were having to trade services and goods and raise/grow their own food because incomes were modest. While a lot of their content also focuses on other aspects of life in the 18th century, there are many cooking segments, and they prepare the food with large stock pots, cast iron cookware, wooden cooking utensils, and other implements that most people still use today. The presenters are very personable, also wear period costumes and there's historic music often playing in the background. It's sort of like going on a fun field trip. Today they made two types of hash that they served on buttered, grilled bread.
This looks yummy! I watch That Lisa Dawn, and I really like that she includes weeks that are just what she would be eating with her husband and Mom anyway, though they do watch their budget, it's not a specifically '"cheap eats" kind of week. I find a lot of inspiration in that, as well.

1 (13 1/2 oz.) bag/can frozen pineapple chunks, broken in pieces
Recipe instructions: Put all ingredients into blender container; blend just till combined. Spoon into freezer tray/container. Freeze till firm.
Yummmm
I am so glad you looked for recipes. When my budget is stricter than usual, I try to find recipes that go with the ingredients I have. Not something that is quick and easy although that helps. Aren't you glad, with food the possibilities are endless? I love learning new things in the kitchen. Looks like I have something to look forward to with lentils.
I add lentils to meat to make the meat so farther. Like for tacos. So I use half pound of hamburger with 2 cups of lentils slightly over cooked with salt pepper onion and garlic to taste. When they are done I cook the ground beef half way drain off as much fat as possible at that point add the drained lentils then continue to cook the ground meat. Slightly mushing the lentils. Then add the taco seasoning of your choice. I use them in chili cooking it similar to the above. I have added them to pasta sauce blending them smooth to add protein and fiber.
Great idea!
I make a deliscious lebtil and chorizo dish. With onions, sweet chilli sauce and a cup of wine, simmer until the lentils is just fork tender, and enjoy! Another is cooking red lentils until soft, blending it into a tomato pasta sauce making a protein filled sauce with none the wiser it contains lentils
Hi Becky Mark and fellow fans of lentils. First a tip on finding Mint. Often here in Mexico the stores just don't have fresh mint. So I raid my tea bag collection. I often have dried mint in tea bags to make mint tea and I open one up and take a pinch or two out for dishes. Or you might have some mint extract or mint leaves among your dried spices.
Another money saving tip which I learned from Julia Child when I was a wee lad in the 1960s. if you have a meat recipe which you already enjoy. (She had a pork dish) Replace half of the meat with cooked lentils. This way you will be incorporating lentils into a Dish you like.
Thanks again Becky. You're bringing back my fond memories of Lebanese neighbors who had so many wonderful dishes. All the best Jim Mexico
I had mujaddara for the first time in graduate school and was sooooo impressed with how flavorful it was with so few ingredients. It’s now one of my favorite comfort meals (so is beans and cornbread which is your next video, so exciting!!! I’m from Texas so we use this delicious pinto bean seasoning called Fiesta in them and they’re so good). Love your channel and all your ideas! I always watch which I am cooking in my own kitchen :)
Sweetheart a great way to use lentils is to stretch ground meat. They can also be used to make whatever you make with ground meat. I use them to make a lovely “meat loaf”, a tasty cottage pie, udon noodles and lentils and rice with lentils. Lentil cutlets and lentil patties both make alternative to hamburgers.
Great idea!
One of the best dinners I've ever had was many years ago when my friend's mom stretched the meat for burritos with lentils.
Stretch ground meat???
Meatballs!!!
Most people use Half ground beef half cooked lentils for a lower overall cost
That looks delicious!
I know you're sticking with things to buy immediately, but mint is easy to grow in a pot along with other herbs.
I love your channel, and I understand why you stick with things you can get at any store on the cheap. You give people that may be on their last $5 hope and a way to feed their family. You will probably never know how many families you were able to keep from missing a meal. God bless you and what you do! Can't wait for more recipes and exploring new foods. Also excited to see how this works in your next 1-month series! Thank you!!!
I didn’t have lentils as a child but discovered them as an adult when I was exposed to Indian and Middle Eastern food. I’m a terrible cook, but I make lentil soup often, sometimes vegetarian and sometimes with smoked sausages. I’m lucky to live in a city with many international restaurants and delis, so I often buy mujaddara. I know it’s not difficult to make, but I have issues with standing for long periods of time so I find caramelizing onions difficult. That’s a shame because I love caramelized onions and would probably put them on everything if they didn’t require such a long time of supervised cooking. I’m glad to see you showing some made-from-scratch meals. For people who have cooking facilities, dried beans and lentils can save a lot of money. Add some produce and some rice or cornbread and you have a nutritious, filling, and comforting meal.
I am a big fan of Ardent Michelle. Her budget recipes are flavorful and delicious. ❤ I like that she give the history of the recipe.
I totally agree!
I agree too! I live near her city of Irvine and it is SO expensive! My husband works there but we can’t afford to even rent there. I admire her ability to create delicious frugal meals even there. And her voice is very soothing 😊
Me too!! Big fan!!
@@DollarTreeDinnersme too. Also check out Mexican cooking on a budget
I love watching her too. Have learned so much and now use the bulk aisles.
I love lentils! And they are so versatile. I put them in the crockpot with chicken broth, my favorite seasonings, and a couple vegetables like carrots and potatoes. Then, I add slices of hot dog or thick ham and it is delicious. Lentils also cook well with pork riblets in the crock pot. Great way to eat cheap and delicious!
My husband makes a version of that but on top of the stove. Sometimes he makes a kinda meat lover version (lol) with hot dog, ham, and bacon. I occasionally make them with Mexican chorizo, potatoes, bell peppers, and carrots. I might try your way with the crockpot one day 😊
Highly recommend. I think I will try the way you and your hubby makes them as well. Sounds delicious!
I think it would be yummier with mango chutney and the raita. I’ve drained the cucumber before adding to the yoghurt. I think mint would have made a big difference too !
Our plan is to add a quarter to half cup of lentils to our vegetable soups for an extra protein and fiber boost. Just make sure to add a little more broth.
If you have a nice fairly shaded area, mint will grow nicely in the garden. It grows and spreads quickly but doesn't require a lot of care. I know it can be a pain but it's one of those nice herbs to have in a garden.
I agree. You can grow it in a pot to prevent invasive spreading, or choose a clumping variety like mountain mint.😉
My family makes a traditional Irish dish called Colcannon. Which is just mashed potatoes and cabbage ( or kale- whatever you have an abundance of) with milk and butter. We had this for St Patrick’s Day along with Bangers ( sausages)
I am a huge fan of lentils. Usually I eat italian style or Americanized style lentil dishes. I have had lentil enchiladas that were made just like bean and cheese enchiladas. Super good. I am subscribed to almost all of those other UA-cam channels. You all are unique and have your on twist and original ideas that cover a large area.
Try them this way: fry bacon and chorizo or sausage until golden then add chopped onion and cook it until it’s translucent, add your soaked lentils, water, salt, powder garlic and some chopped tomatoes or a can of rottel, cook until the lentils are soft, I like to add chopped fried sweet plantain at the end and I can eat an entire pot of this
Thank you for recommending those other channels. I actually watch some of them already. Love how you all give a different style of eating on a budget. Enjoy your channel and especially the helping your neighbour series.
I know you said you don't tend to like curry powder, but there's an Indian dish made with just turmeric, black pepper, and cumin for spices called khichidi/khitchari that's also very simple. It's lentils and rice, those three spices, and some ginger and garlic, and it's really delicious and comforting and easy to make. It's got a lot of ingredients in common with mujaddarah - you can even top it with some yogurt - but it tastes different enough you can have them back to back without getting bored.
Is it weird that I love eating khichidi for breakfast? It’s almost like a savory porridge and it keeps me full forever
I wasn't a big bean/ pulse fan until i gave up meat (26) years ago. Also grew up with very meat and potato meals so that stuff was generally oily bean salad. Look into whole food vegan for recipes. Probably my fave is lentil salad dressing (i use one from a book but theres similar recipes out there) and lentil gravy. Lentil parries of some sort are good too. Years deep into this i'm still learning and things like yellow split lentils (vegan omelette) and red lentils (gravy, soup) just keep expanding my repetoire. Flavour profiles are all chageable. Makes sense that beans and rice are a staple in most places
My favorite thing to make with lentils is a lentil bolognese! Super easy, cheap, and tasty over any pasta you have! Also love making a lentil “meatloaf” but can be a bit more time consuming. Good to make when you have a lot of leftover cooked lentils
I’m not from the USA and neither am I struggling financially but I’m not a very good cooker and don’t have the time to buy and cook as much fresh food ass I’d like and your creativity helps me a lot to still be able to cook at home instead of buying out

I make a cottage pie that is very inexpensive.
1 lb ground turkey
1pkt beef stew seasoning mix
1/2 pk frozen mixed vegetables
1 cup of water
1 cup of mashed brown lentils
2-3 potatoes cooked and mashed
Cook the ground turkey, add beef stew seasoning mix, mixed vegetables, mashed lentils, and water. Simmer until a thick sauce forms.
Pour into a casserole dish, top with mashed potatoes. Put in the oven for 10-20 minutes.
So glad to see you step away from packaged foods in favor of simple, raw ingredients! Mujaddara is one of my favorites.
Maybe legumes/pulses around the world could be a series idea: Italian Tuscan white beans, Greek gigantes plakes, Moroccan chickpea stew, Egyptian ful, Indian chana dal, Mexican drunken beans, etc.
That’s a wonderful idea. Would love to see more recipes like this
i've been eatng lentiils since the price of meat has gone up so much. Just made lentills cooked in the spicey taco seasoning and then mixed with the instant potatos. all dollar tree items. I';ve found with lentills, strong flavoring is best. I also added a little bbq sauce for smoke/sweetness balance. I use lentils for filler when i make meat loaf, pink lentils to make spaghetti dinner more nutrious. Also in keep lentils in my strategic stockpile of emergency foods. I think you'll find them very versatile and delicious.
I LOVE, Frankie@Struggle Eats, and That Lisa Dawn too! It's great that you share those who inspire you with us. You've got good karma Rebecca. I will def be trying this recipe, it sounds yummy to me. ❤❤❤ I can't wait for the next vid. Great work!!
The Irish colcannon is something you could try! Very inexpensive ingredients (potatoes, onion and cabbage) and it’s delicious and filling!
I'll check it out!
Love Southern Frugal Momma! Brooke is a dear! (Also, a pinch of sugar will help with carmelization; a sugar packet from a gas station (or 2) with a coffee would make it free if you don't have sugar in your pantry... only takes a little!)
as a senior on limited income I also appreciate @Simple food simple life.
Just want to let you know that mint is pretty easy to grow. If you do buy some sprigs at the store put a few in water and they will sprout roots. You can plant them in a pot and it will do fine on a sunny window sill.
Girl..love all your videos, love dollar tree content the most..but still love everything! You are getting closer to 200k! Let's goooo!❤❤
Lentils used to stretch or substitute for ground meat is a go to. As mentioned before in the other comments it is a great way to reduce ground beef or pork cost. I like to use a half pack of chorizo and cooked lentils for burrito or taco filling. The chorizo is already spiced and plays well with the lentils. I also make a soup/stew in colder weather with lentils, a pack of smoke sausage with a ton of root veggies, and a can of rotel or diced tomatoes. Pairing lentils with some meat tends to be eaten better in my family.
I prefer tvp to stretch my ground meat. I don't know where you'd find it in the US tho
@@Rebecca-zj4wq some of our grocery stores have tvp. Our discount grocer has some with the El Guapo bagged spices, labeled as textured soy protein at a good price. A local fancier store has a section of Bob’s Red Mill products including TVP, although theirs is more expensive.
@@Rebecca-zj4wq I use TVP also. I tend to find it in the Hispanic aisle. I like the crumbles, but lentils tend to be less expensive as they can be bought in bulk. My kiddos like ramen, adding some Tvp to the noodles while cooking bumps the protein and is reminiscent of the chicken in chicken noodle soup.
@@bootsmith8016 that is the exact brand I use as well.
I cook equal parts lentils and brown rice together with some frozen southwestern corn mix (corn, diced bell pepper & onion, and black beans) added. Then chill the result and combine it with shredded cabbage and carrots for a delicious and hardy salad base. Then I add whatever salad toppings and dressing I'm in the mood for. Super nutritious, filling and fabulous!
I"d love to see you try halushki (noodles/dumplings, onions and cabbage). Egg noodles are the easy way and absolutely delicious. Homemade noodles or little dumplings (like spaetzle or teeny gnocchi)are better. Leftovers are even better kind of pan-fried the next day.
Others could be pappa al pomodoro. I love this easy, filling tomato and bread soup that really gives you that same kind of feeling of grilled cheese and tomato soup but without the expense of cheese.
Rebecca, you and That Lisa Dawn are the two cooking channels that I watch on a regular basis. You are both very sweet, down to earth, and stick to the no frills basic style of cooking that I enjoy watching. ❤❤
My favorite way to eat green lentils is a lentil sausage soup. I sauté some ground spicy Italian sausage, just a few ounces is fine, along with a chopped celery stick, chopped carrot, chopped onion and 2 chopped cloves of garlic. Sauté until meat is browned and all veggies are soft. Then add rinsed lentils and about 4 cups of water and 4 bullion cubes. Cook until lentils are cooked through, add Italian spice and salt and pepper to desired taste. It is soooo good! I also love black beans and rice, I make my black beans with onions, a chopped jalapeno and a bit of bacon grease and some chicken broth, cumin and chili powder.
Thank you for making this video, I'm not even 2 minutes into it and I'm already crazy about it. I too was not raised eating Lentils. I have tried to cook them, but don't know what I'm doing with them. I have plenty in my pantry as I know they are quick and easy to fix. I want to love lentils. I know how to cook beans, meats, veggies, heck I even do LOTS of home canning and dehydrating. I do not know about lentils and I thank you for this video!
You got this! Hopefully you get some ideas from the comments too
Love this! You may want to try swapping yogurt for sour cream, and then adding a drizzle of olive oil to the sauce. I frequently make lentil tacos, lentil veggie burgers, and sloppy josephines, which is a sloppy joe but with lentils and vegan. Thank you for all of your content and tips!
@@ShebaCat-q6p I much prefer sour cream.
Lentil burritos using red lentils is great. I faked out legume haters with that one! Use as ground beef just add more water or broth and your normal taco seasoning stuff.
Yaaaaayyyyy!! I've been hoping you'd do some recipes from other countries. If you can find an Indian grocery, you can get red lentils for a good price. Red lentils cook super fast and aren't as cardboard-y as brown lentils can be. They also sell spices in big bags, way cheaper per oz than regular grocery stores. This is all dry stuff. So you can stock up for 6 months in one trip.
Thank you. Ive never used lentils in the manner ive seen in this chat. So many wonderful ideas i will be trying teal soon. Ty chat ❤.
I think ill try this recipe next week too. I just know ill love that cucumber topper. The cucumbers are coming in good here. I love new cheaper recipe ideas. Your videos are great! Im learning to stretch my meals now.
Mexican Food on a budget, Mama Bairds, and Julia Pacheco are some other amazing creators with budget meals.
Cheesy Potato Flautas:
1 lb. fully cooked Russet potatoes,
2 Tbsp. Vegetable oil,
3/4 cup chopped onions,
2 cups grated Mexican cheese,
salt and pepper to taste
12 corn tortillas,
2 cups shredded Iceberg lettuce,
1 cup sour cream,
1 cup Mild salsa,
1 peeled and sliced avocado,
1/4 cup chopped cilantro.
#1. Mash the potatoes till smooth. Heat the oil and saute the onion and until lightly browned, add to mash potatoes and cook for 2 more minutes. Incorporate the shredded cheese and season with salt and pepper to taste. Mix until the cheese is completely melted. Remove and set aside.
#2. Heat the tortillas just to soften and divide the cheese potato filling into 12 equal size portions. Spread the filling along the length of each tortilla and roll into a flute shape, secure with a wooden toothpick. Repeat with rest of tortillas. Heat the oil and fry the flautas until crispy and golden brown. Drain on paper towels.
#3. Top the Flautas with lettuce, sour cream, salsa, avocado and cilantro. Serve warm.
That sounds yummy
I made this for dinner tonight with porkchops, with veggies from our garden and everyone loved it. I have made something similar before with black beans and rice with cumin, salt, pepper and a couple bay leaves and would put sautéed peppers and onions on top and any ground meat that I had available that I would season with taco seasoning.
This is one of my favorite lentil recipes and the one that made me a lentil convert. I also like to cook up a big batch of lentils with onions carrots and celery with just splash of red wine vinegar at the end for brightness. I use those as the base for bowls with roasted veggies and cooked greens for easy lunches
If you're worried about wasting the mint, there are ways to add it to recipes to use it up. Michelle used it in spring rolls, which is cheap when made with shredded carrots, lettuce, and cucumbers. Adding shredded chicken or a flavored tuna pouch can provide a good protein. Adding it to a greek gyro dish might be good too. Ground lamb is usually the protein seen in traditional gyros, but ground beef or turkey are good substitutes. And adding mint to the meat before forming the loaf to cut will help make it taste more authentic.
You would have less issue with your stove being too hot if you used a pot slightly BIGGER than the burner eye, instead of a pot smaller than the eye.
I put lentils in spaghetti instead of beef. Needs a little more onion and garlic than usual.
That rice soak water is a wonderful proteins mask for hair, just put your head down in a dishpan and pour it over, then twist it up in a messy wet bun and sit around dripish for half and hour before washing it.
I love baked navy beans made with mexican chorizo and crushed tomatoes. Served on toast or crusty bread.
Growing up my mom made a lot of tuna noodle casserole and lentils…. So no surprise those are the two things I really don’t like as an adult. But I do like lentils in soup, I pretty much add them to any soup or stew I make. I want to start adding them to any ground beef I cook 😊 great job Rebecca!!!❤
I wanted to try lentils for the obvious nutritional benefits and found a very good recipe in a Mediterranean instapot recipe. It’s onions, carrots, chicken broth, and lentils and basic spices it’s really good and I even like putting some feta on top :) I also have made an instapot ham, Swiss chard ( or preferred green) lentil soup we absolutely love! Again love your videos they are very informative and makes me think of affordable options even more than I already do which is great and your videos are very calming which I very much appreciate especially after the month I’ve had :/ so thank you 🤗
I used to watch the Frugal Gourmet on PBS… he specialized in Peasant food from round the world… worth looking into 🙂 I enjoy all your content. Thank you🥰
I loved him! I still make cabbage in chicken broth and haluska... Kids love them! 💖💖💖
I always wait for your videos with expectation of something good, and this week was no different. Thanks so much for this recipe, as it looks like a keeper. Regarding mushy lentils, on the recipe’s webpage it says:
Pay attention to the cooking of the lentils. Like many beans, lentils may vary in cooking time depending on the type of lentils you use. Refer to the package instructions and cook them al dente first, because they will also continue cooking with the rice.
Why did my mujadara come out mushy?
Because we’re cooking the lentils and rice together, it could affect the texture of them when they come together, especially since the type of rice can affect the amount of water needed for the recipe. To make sure it doesn’t come out mushy, you can cook the rice alone in one pot, cook the lentils alone in another pot and then combine them.
This is very similar to a popular Egyptian street food dish called Koshary. It’s mostly the same expect we add pasta and tomato sauce. It’s Egypt’s national dish, and it’s one of my favourites. Look it up, I think it would make a good addition to your cheap eats series!
I will thank you! 😊
@@DollarTreeDinnerslook forward to it
I just made koshary last week! I love it
Lintels were never on my radar, until..... I had Sweet Italian Sausage and Lentil soup.....omg!! I had to learn to make it. My husband who is super picky, actually loved it too!!! So now that soup is a go to.
That’s actually the first type of lentils that I cooked and enjoyed as well! Mine was a spicy sausage and lentil soup though inspired by carabbas
@@DollarTreeDinners OMG...that's where I had it! I craved the soup so much afterwards. I looked up a few recipes on youtube and found one I liked. My husband is so picky, I really didn't think he would like it, but to my surprise he raved about it. So Good.
It is very easy to grow mint and basil since you have a nice yard. You can plant it as a border
Mint has a reputation for growing out of control though. Better to grow it in pots
I recently substituted cooked lentils for meat on homemade sloppy joes (not canned Manwich!)
We ate it over rice instead of rolls. Delicious!
the only addition i would have done here was zested the lemon before juicing it. the box grater was already used so you could use the smallest side for the lemon! no additional equipment to wash :). BTW I love your videos! I am on a financial journey to pay off my car and student loans in an accelerated time so i have restricted my budget for food and everything else. I love the ideas you come up with! I also have food lion (North carolina) but the dollar tree is not as convenient to go to. I generally will shop walmart sunday night while i am at work. Monday morning when i get out of work i pick it up and im ready for my week off at home.
I made this tonight and it was so good and filling! I don’t have yogurt, so I substituted with sour cream. Thanks so much!
I'm so happy for you, I see your channel is growing since I started watching! You're a natural at this you should have your own show on HGTV!!!🤗🤗❤
advice regarding mint: you can actually grow it on your window sill! I have a bunch of mint growing in big pot, it's very resillient, grows quite fast and is a great addition to my water and teas, so I highly advise trying it out ☺
That’s my BestFriend that’s my BestFriend! Ilove lentils. I love them in soup form mostly. Tbh. I use the diablo chili in it and crackers kinda a must but w.ee lol. Anyway thank you for showing another meal that keeps the lentils intact. because even though to me they taste good whole when they are puréed in feel like i ate nothing. Leaves me still hungry. Loveyou
I think a Japanese style cabbage pancake (Okonomiyaki) would be a great breakfast or lunch option. I springboard off the basic recipe and use other veggies. I made one with more batter and defrosted frozen asparagus and it was delicious. I served it with a cheesy sauce instead of mayo and chili sauce.
Cod fish with white gravy can be Portuguese or Irish or Scandinavia. Potatoes was the side, when my husband started making it there were so many places that served it near the same. Buying a bag of frozen cod fish can serve many too.
As always - I love your content. I did wonder how many servings this made? And a question - did you reuse the oil the onions caramelized in when you sautéed the onion/lentils? Or use fresh oil?
Great timing on introducing lentils. Last night I made a curry with a half can of lentils and a bunch of veggies, Thai curry paste and a can of coconut milk. It's not a flavor I cook often so it's one of my go tos when I want a flavor change up. And using the canned lentils saves so much time but it does cost more then a bag of dry lentils. The other half can of lentils will be used later in the week for taco filling.
I too have used well cooked but not mushy lentils to extend hamburger. Cooked from dry when I was really pinching pennies. I 'snuck' it in so family wouldn't notice and started using about 1/4 cooked lentils to hamburger. I'd add the cooked lentils to the hamburger as the burger browned. Doing it that way helped disguise the lentil taste. I'd use that mixture for my spaghetti sauce and also taco filling. I worked up to almost equal parts lentils to burger and no one even noticed they were there. What a savings.
I did want to mention that like any other 'from dry' bean, before cooking the lentils need to be both rinsed/washed and also examined for any little rocks or other debris that might be hidden.
It made 4 large servings and you can do either! Reusing the oil from the crispy onions will give a more intense onion flavor to the lentil dish
Great way to dip your toes into lentils is sloppy joe lentils with diced onions and green peppers added.
I love this idea I'm glad you're doing this series!
Also if there is jasmine rice at the dollar store I recommend you try it. Jasmine rice is just as versatile as white rice but it's better. I grew up with that and we used it and everything because it was pleasant aroma a delicious taste and good tooth.
I made a version of this today. I mixed cooked lentils, browned onions and a pouch of tilda bombay rice ( .99 from Ollies ). It was really good.
I’m also not a fan of lentils, I grew up eating them . I am Hispanic and this is a staple in our households, because it goes a long way and very nutritious. I am already subscribed to all the channels you recommend. I am always looking for budget videos they’re my favorites 😊
I'm Lebanese & I love your channel!! I was so happy when this popped up in my subscriptions :D
There’s actually a lot of Indian food that isn’t “curry” based. Another lentil and rice dish you could try is Indian Khichidi, which is not curry based. How it’s made also varies based on region, so you might find a version you like.
Also a cool series suggestion might be a subscriber recipe series.
I can’t remember if I already commented but I was so excited about this and reminded me of a recipe I really like. I’m of Lebanese descent and it’s so exciting to see you showing one of our traditional dishes. I’m making this tonight!
I use brown lentils to pad out my mince beef.....so I use them in lots of recipes. It means that I can cut back on meat.
My husband is a big fan of yogurt salad such as you made and honestly, he doesn’t usually top things with it. He just eats it on the side like a salad. This is also a little less yogurt and more of the stuff in the yogurt so the yogurt would look chunkier I guess than yours did. That’s pretty yummy. this is my favorite kind of Arabic food the beans, the rice, possibly a pasta, yogurt, cucumbers, cumin that’s pretty much what it’s all about and onions
Made this for brunch today. It was delicious and very filling. I used can lentils that were drained. Next time use two cans instead of one. Definitely a time saver if you have the money to buy canned vs. dry lentils.
I would totally make lentil rice pancakes with that the next morning. Then add your topping. Hot sauce is my go to.
Also, I like to add a Tbsp of lentils to my soup. Think of it as a complimentary addition. Adds great earthyness.
It’s not until this video that I realized I should send you over a really good lentil recipe I made my own. I took my Peruvian father-in-law recipe (and a few others and just my general knowledge) and made it my own. It last so long in my house. I also do a more flavored white rice (aka garlic powder so still white rice). So a nice white rice and lentils and I also know a good Spanish bean recipe that I make with pink bean. All simple meals that are inexpensive or could be made super inexpensive.
Also, for a cheap, quick, lazy meal, I sautee onion and pepper diced and add a can of Goya black bean soup and a little water and I add a little white packet of sazon and regular sazon but this is optional I guess. I typically find these can reasonably cheap. I sometimes add bay leave dried but take out soon after because I dislike a strong bay leaf taste ( not as cheap as plain black bean) ( even that canned black bean soup is a perfect regular Spanish black bean that can be paired with white rice)
Have you ever made any traditional tomato and egg dishes like Turkish menemen, Chinese tomato and egg stir fry or shakshuka? Seems lots of cultures have some variation. Eggs are such a versatile ingredient and usually inexpensive. Korean gilgeori toast also comes to mind even though it doesn’t use tomatoes.
Yay for lentils!! I like to use them instead of or as a supplement to ground meat (makes great Big Mac salad bowls) and making them into a soup that’s seasoned simply w lemon and cumin.
I found out the hard way that cumin Can Burn..and tastes terrible. So my Spanish neighbor informed me to Always add at the end to enhance flavor.
I have recipes for lentil chili, lentil sloppy Joe's and lentil "meat" loaf, all good. I think my favorite is the sloppy Joe's. Also there are different types of lentils, red, green, yellow etc. Each with a different texture when cooked..
