Chicken and Rice Casserole
This chicken, rice, and broccoli casserole is a healthy and easy-to-prepare dish that is perfect for a weeknight meal. It is made with chicken thighs, basmati rice, spices, and a yogurt marinade for the chicken. The casserole is baked in the oven until the chicken is cooked through and the rice is fluffy. This casserole is a hearty and satisfying dish that is sure to please the whole family.
Chicken and Rice Recipe
Rice Ingredients:
1 ½ cups Basmati rice, rinsed and drained
2 ¼ cup chicken broth
½ red bell pepper, super fine dice
½ yellow onion, super fine dice
4 baby bella mushrooms, clean, super fine dice or you can leave bigger slices.
1tsp. Dried parsley
1 tsp. Dried basil
1 tsp. Salt
1 Tbsp. butter, grass fed if you have it
1 Tbsp. olive oil
Chicken Marinade Ingredients:
5-6 chicken thighs, boneless skinless
⅓ slightly heaping cup plain greek yogurt
¼ cup olive oil
½ tsp. Dried Thyme
1 tsp. Tarragon
1 ½ tsp. paprika
½ tsp. Garlic powder
½ tsp. Salt
1 bunch of organic broccoli, cut into florets
Directions:
Preheat the oven to 400 Degrees F.
Place all of the marinade ingredients except for the chicken in a medium size bowl and mix well. Then add the chicken and stir to coat. Cover the chicken and place in the refrigerator for at least 1 hour, 2 or 3 hours would be even better.
In a large frying pan over medium heat, add the olive oil and butter. Once hot, add the diced onion, bell pepper, and mushrooms to the pan. Saute, stirring occasionally for about 7 minutes or until softened and translucent.
In a 9 x 13 baking dish, combine all of the rice ingredients including the onion mixture and stir well. Then lay the marinated chicken thighs on top of the rice. Any leftover yogurt sauce should be spread over the top of the chicken pieces. We don’t want to waste a drop of that delicious sauce!
Cover the baking dish with foil and place in a 400 degree F. oven for 30 minutes. Remove the foil and add the broccoli by placing the florets all around the dish. Place the chicken and rice back in the oven for an additional 15 to 20 minutes or until the rice is cooked through and fluffy.
Serve this up with a nice salad and you have a delicious, nutritious and healthy meal! Enjoy!

We just made your recipe 'oven-fried chicken that tastes like deep fried, healthy' for lunch with fresh veg and a fresh peach cobbler on the way for dessert. We used the toaster oven, quick & doesn't heat up our whole house. Kids are home for summer and they helped with every step. They want this chicken with rice next. In fact, we bought some boneless skinless thighs and I have leftover plain rice from a couple days ago- I'm gonna try to adjust and see if I can use it up with this recipe?
I would really like to see you make this recipe as is to experience the great flavor. The only way I can see you using your left over rice is to marinate the chicken as is and then bake it in a baking dish and cook it per instructions in the video adding the broccoli at the end. Reheat your left over rice and serve together. Since your rice is already cooked, you shouldn't try and cook it again. I would love to hear what you ended up doing. Good luck!

I made this and it was Delicious! I had to use can chicken (didn't have whole breasts) Had to use brown rice and lactose-free sour cream instead of yogurt. I even mixed the chicken in the marinade after draining it. This is a keeper in our house!
