I began cooking for the family when I was a teenager (to spare us eating my mother's concoctions!) so I've been at it now for 60 plus years. You can teach an old cook new tricks because I am now a huge Instant pot fan, thanks to you!
Omg same!! My mom was a terrible cook. My grandma started teaching me when I was like 7. She started going blind when I was 12, so I basically started taking care of her and cooking for her and my family at that age. I'm 46 and I'm so thankful for her and these UA-cam videos for inspiration.
SAME! My mother didn't cook much & when she did it was awful! My Grandmother taught me the basics but her cooking was always rather bland...it was a standard meat, potato, vegetable (usually frozen peas) & white bread every night. When I was first married in the early 90s I use to subscribe to Family Circle & Woman's Day Magazines just for all the recipes in them (I still have all of those clipped recipes saved!) -- I'm 48 now. My youngest just turned 16 yesterday. I still cook Family dinner almost every night. Casseroles are my absolute favorite! 😊 I personally could eat casseroles literally every single night!
I love casseroles, too! I'm an elderly woman who lives alone, but I've found if I make a casserole, then I don't have to cook for about 4 days and yet I can have some great meals. Or, if they are freezable, then I can freeze half and still have meals for a couple of days! I most often buy a rotisserie chicken, divide it up & put it in the freezer and that makes it even more convenient for me! Thanks for sharing! You're girls are adorable!
One of the first things I made as a new bride in 1972. Still a staple. I have found over the years to mix the broccolli with some of the soup and I use swiss instead of cheddar. Still a hit.

I make the enchilada casserole but I add a cup of salsa to the enchilada sauce it helps keep it moist. Thanks for the other casseroles. My family loves casseroles. They are quick and easy to make after working all day.

Just watched this and made the chicken enchilada casarole and it was AMAZING! After cooking we added salsa, avacado, and sour cream cant wait to try more of these recipes.
Enchilada casserole: I like the addition of black beans. If you pour your sauce into a bowl you can spoon or dip during assembly. Place a little non stick spray/oil on bottom of the dish and in a pan. Then gently warm tortilla in pan. Dip tortilla in the sauce bowl. Now lay into the casserole dish and have fun with your layers. I hope you will find this slight adjustment to the use of the sauce a moister more authentic flavored casserole🌼. I love your channel, blessings…

Six Sisters' Stuff ya that was a long time ago but some of those have remained through the years and are never quite the same, my oldest daughters favorite was some ground beef cooked into beef rice a roni with a can of red kidney beans, she even asked for it for birthday dinner several times, I rarely do anything from a box anymore but back then I was a poor widow with 4 hungry mouths and I had very limited skills so I used what I had, the egg noodles with chicken cheese and green chilies was an accidental hit also ..I’m so glad you’re feeling better, hormones are weird, I bet you’re having a boy this time, they always bring trouble ❤️

The Enchilada Casserole was fantastic! I used 2 - 10oz can enchilada sauce and flour tortillas (what I had on hand) and it was perfect. 6 perfect servings.

It might not be as fast, but I boil chicken on the stove covered in chicken broth for 45 minutes. That might sound like a long time, but it shreds beautifully for casseroles and the broth gives it extra flavor. I make a big pot of chicken that way, drain the broth off, then freeze it in 1 pound packages. Easy peasy! Having cooked chicken ready to go in the freezer is a real time saver!

I remember the 1st time my mom made chicken divan,she too got the recipe from a magazine or something. I remember she used a whole chicken and boiled it and then she cooked the broccoli inside of the broth it made a d had to.wait for.it all to cook...took hours and hours it seemed lol but it sure waa mlm good. We grew up with both parents knowing how to cook an my Italian grandpa making food at their home. So I learned how to cook and bake from a very young age. Taught my niece and my daughter at very young ages. Both my Grandpa and dad had beautiful gardens but I did not get their Green Thumb 2. We all grew up with casseroles and I still make them, I've made versions of all these. I lost my original recipe several years ago but I know the layered enchilada casserole was one of those recipes that promotes a certain brand I want to say it was El Paso. It also had uncooked minute rice, corn, salsa and you served it with sour cream and if you wanted like guacamole or olives or tomatoes. One of the favorites of mine and my cousins was taco salad we would make that big giant skillets to feed all of us. And then toss the cold lettuce and some chopped veggies through it and we always had both hamburger that was seasoned with taco seasoning and typically red kidney beans. Like I said I started cooking young so as I got older I started cooking the meals and cleaning up the dishes. One of my favorite go-to still is boneless skinless chicken, chunks of potatoes, onion and carrots, and then we've use multiple different sauces I want to say my favorite is sweet spicy BBQ sauce, another good one is a marinara sauce. Honey mustard is another good one but haven't made that in quite a while. A little bit more recent I discovered if you switch the regular potato for sweet potato and a teriyaki sauce that is really good, I came up with it after a Korean chicken dish. If I actually have all the proper sauce ingredients I make my own, it's got some spice to it but you can change the heat level. Since the little one doesn't like broccoli have you tried doing it with green beans? And I have a trick I've used on a friend's son is adding chopped up bacon. I have gotten him to eat so many different vegetables without him knowing through the power of bacon! Evil laugh mwahahaha, that and cheese

Perhaps if you put a few big pats of butter and sour cream or even a bunch of chopped scallions might take care of the dryness issue. Just a thought. On my chicken and rice i also add 1 can cream chicken and 1 can cream mushroom and a little milk stir and then i mix everything together put in a bake dish with cheese on top so good.
My family loves chicken devan! I put regular yellow curry in the cream of chicken mixture and it’s delicious. I usually just use bread crumbs mixed with butter but your way sounds amazing so I’ll be trying that next time! Thank you for all these yummy ideas!

I make curry Chicken Divan just like this using drained, canned chicken (2 large cans). It’s so good and the kids will like the smaller, tender chunks of chicken.
I have always loved your channel but I have to say it's great seeing your sweet daughters learning to cook with you and helping out, as well as taste testing. I know it's always a bit iffy to put your kids 'out there' but I think this is the right way to do it/the right amount. I love hearing them give their ratings to the recipes. The chicken Divan recipe is as old as the hills and one of my favorites too. For variety, add a tsp or 2 of curry powder...keep it light, the flavor will intensify with cooking. For a little something different with the enchilada casserole use Doritos instead of corn tortillas and add a cup of sour cream to the enchilada sauce....it's also very good with chicken and green enchilada sauce! One way of making enchiladas is to dip the tortillas into the red sauce before filling them or placing them in the baking dish. This may prevent the dryness you are experiencing. You may have to use a can and a half or two full cans of sauce to make that work.

I make broccoli chicken divan with cheddar cheese sauce. This version looks good! The enchilada casserole will be on my table Tuesday!! Yummy! Chicken and rice with cheese. What’s not to like!!
My mom did Chicken Divan too, but our recipe is a little different. we do 1 cup mayo and 1 cup sour cream. we dice up the cooked chicken and stir it into the sauce mixture. we do a mixture of broccoli and cauliflower. oh also we use parm cheese instead of cheddar. and we brown our buttery bread a little in a pan first then stick it on top. oh and we add a little yellow curry to ours as well. This dish has been my youngest's favorite dish for years and asks for it ALL the time :D

Chicken Divan is my family's favorite meal of all time. We shred the chicken and also add curry powder to the sauce. Serve on rice and its so good.

Perhaps if you put a few big pats of butter and sour cream or even a bunch of chopped scallions might take care of the dryness issue. Just a thought. On my chicken and rice i also add 1 can cream chicken and 1 can cream mushroom and a little milk stir and then i mix everything together put in a bake dish with cheese on top so good.

My family loves chicken devan! I put regular yellow curry in the cream of chicken mixture and it’s delicious. I usually just use bread crumbs mixed with butter but your way sounds amazing so I’ll be trying that next time! Thank you for all these yummy ideas!

Hi, I'm in NM, my family makes it with chopped hot green chiles and mushroom soup with hamburger - mix together pour over each layer of corn tortillas with cheese on each layer, yummy!
So add cream of mushroom soup to the hamburger meat
I make curry Chicken Divan just like this using drained, canned chicken (2 large cans). It’s so good and the kids will like the smaller, tender chunks of chicken.
I have always loved your channel but I have to say it's great seeing your sweet daughters learning to cook with you and helping out, as well as taste testing. I know it's always a bit iffy to put your kids 'out there' but I think this is the right way to do it/the right amount. I love hearing them give their ratings to the recipes. The chicken Divan recipe is as old as the hills and one of my favorites too. For variety, add a tsp or 2 of curry powder...keep it light, the flavor will intensify with cooking. For a little something different with the enchilada casserole use Doritos instead of corn tortillas and add a cup of sour cream to the enchilada sauce....it's also very good with chicken and green enchilada sauce! One way of making enchiladas is to dip the tortillas into the red sauce before filling them or placing them in the baking dish. This may prevent the dryness you are experiencing. You may have to use a can and a half or two full cans of sauce to make that work.

I make broccoli chicken divan with cheddar cheese sauce. This version looks good! The enchilada casserole will be on my table Tuesday!! Yummy! Chicken and rice with cheese. What’s not to like!!

My mom did Chicken Divan too, but our recipe is a little different. we do 1 cup mayo and 1 cup sour cream. we dice up the cooked chicken and stir it into the sauce mixture. we do a mixture of broccoli and cauliflower. oh also we use parm cheese instead of cheddar. and we brown our buttery bread a little in a pan first then stick it on top. oh and we add a little yellow curry to ours as well. This dish has been my youngest's favorite dish for years and asks for it ALL the time :D
