How do you eat it after it is prepped? Are there sauces that you buy separately or do you take it home to cook with? Looks very interesting, the only thing I've tried from the plate is abalone and conch

Like I know how bad it would taste to grab a fish out of a lake cut it up and just eat it. Like how are their taste buds so different from like an Americans. I just don’t get it. They are extremely clean with their job and I appreciate that. I just wish I could figure out how people find this delicious, like the pink worms still had remnants of blood in them still.
There are several sauces to go with this. No one eats these without sauces. Still uncooked but safe for human consumption if it is from ocean. But you cannot do this with fresh water fishes. Pretty dangerous.

I have, legit, just taken pieces off of a fish raw that had been as you described just taken out of water and then cut up 😂 it was amazing. However, i also live on the tail end of Long Island and ive been surrounded by water (and seafood) my whole life.
Most oceanic fish and creatures we can eat without being affected by parasites, the issue is when they are out of the oceans. That's when pathogens in our environment can make the meat dangerous
