To those of you complaining about no gloves. Go do a food hygiene course. You are far more likely to have cross contamination with gloves. Much better to wash your hands regularly.
Also, the same food-handling practices are observed in brick and mortar restaurants too; you just don't see it. That said, though, it wouldn't hurt some of these vendors to wear hair nets. You just can't pull a hair out of your sandwich and keep eating.

I've seen professional, classically trained chefs stick their fingers in their mouth to taste a glaze or something that they were preparing. I was in the restaurant industry for a very long time. You're supposed to wear gloves to serve a finished product. The only time that health code allows it is if it is heated to a point where any bacteria is killed, but that is a horrible judgement call. It's better to wear the gloves. The way you get around it, is having multiple types. Wearing a latex and putting an overglove that's plastic over it so that you can take those off easily without having to change the ones on your actual hands over and over. You can do this even with raw food without cross contamination. In London, they are supposed to wear gloves for handling street food.
