It’s also a great gift for those too elderly to cook all their own meals, great for those with arthritis or recovering from surgery or illness. Frozen or ready made dinners taste like corporate food. Yuck.

Hey Becky! My Grandmother always told me when it comes to doubling recipes, you don't double baking soda or baking powder. You reduce by a fraction for every teaspoon, I think by 1/8. You may want to investigate that. Baking is tricky! I love that you're making these meals for your friend. A dear friend of mine did this for me when I had my first child and it was such a blessing!
I've never had that issue... I always double every ingredient and never once had a problem, but I'm going to try it this way and see if anything changes.
It's definitely a privilege to be able to afford fresh ingredients so let's not shame those who can't afford it. Ideally we'd all love to cook with fresh ingredients.

I have six children. Before my due time, I would cook and bake extra so I could have something in the freezer for those bad and/or disorganised days. I wish I’d a friend like you. We were on our own and I am always thankful that I’d had the energy to do the pre-baby meals. I think we’d’ve starved if I hadn’t had those meals on standby. Bless you Becky. My key ahha moment in baking, I finally had after like 10 years of home cooking was learning about bakers percents. Doubling and halfing dosent always work out to just double the numbers. But converting to the bakers percents you have control of making what ever amount you want.
Shoot I don’t understand what you mean? If you double it, you’re doing 100% more, which will still be the exact same percentages of all ingredients. And if you half it, you do 50% less. That wouldn’t work? Maybe I’m confused 🙈

I’m not Becky but I have a couple ideas for you to think about. First just give meal prep a try. No disasters will occur. Just dive in. Second, a good way to start is to double or triple recipes when making regular meals. If you’re making chili, make a triple batch, eat one batch for dinner, and freeze two batches. Eventually you’ll have a good cache of food in the freezer without much thought or planning. If you like the convenience of having meals in the freezer, eventually you can start doing planned half days and then full days of meal prep. So try on a small scale rather than jumping in at the deep end! Enjoy!

You might not class yourself as a baker but those muffins looked amazing, can't imagine them looking better. I have never seen the shredded hash browns nor some of the bigger sizes here in the UK. I think I have 5, 1 pair of kitchen scissors and 4 ordinary ones, because I use them so much and I don’t have to wash them by hand when I used them, I can just take a new pair (I don’t run the dishwasher every day since I’m single etc)! 🤗

Onion broth can be made with just skins, 1st tough layer & top / root end cut offs. I keep a bag in the freezer to collect them as I'm using onions in cooking.

A woman having a baby for the first, second, or third time has her hands full, and she's more than likely exhausted. Awesome cook! What a wonderful valuable gift. Tip for filling muffin tins, I use an ice cream scoop to avoid mess and drips on the sides cause I’m hopeless otherwise. Ice cream scoops are good for biscuits too.
Another great reason to shred your own cheese (other than the obvious lesser impact to the pocketbook) is that the dusting put onto the pre-shredded cheeses can take a meal from being gluten-free to not in one small choice! Love your channel! -Jen, KC

All I'm saying is that most of the major food brands of shredded cheese are gluten free, and that a simple look on the back, or Google search will help you figure that out as opposed to just swearing off shredded cheese altogether. 😊
I'm never sure. But I harvest sweet potato when the leaves start to yellow, but definitely before the first frost. I also put my hand under the soil to see if I can feel any that are large enough to use - a bit like I do with spuds.
Most sweet potatoes are ready from 90 to 110 days from planting. Try digging up one and see if they are ready. If you leave them to long they tend to grow small root hairs on them but they are still OK.

I know this was 2 years ago but I have been watch8ng tun of freezer meal preps and yu.r the one I like I have nerve damage herniated spine to name a few things with a large family whilst home educating 5 as well and I can't get to cook everyday so today I did 2 different types of meals and the prep for tomorrow done for another 4 different type of meals. I've had some formal culinary training. Doubling baking recipes is tricky. It's all about science and it's not as simple as just adding double the ingredients. You have to alter the ratio of dry and wet ingredients. It normally doesn't work out well. My teacher always had us mix up multiple single batches if we needed more than one batch. We had a few big batch recipes that were ready to go into the big floor mixers but everything else was a normal sized recipe that shouldn't be doubled.
When I ‘double’ a baking recipe I measure into 2 dif bowl. The final product will rarely come out right if you double or triple a recipe intro the same bowl
I bake alot and I am successful at doubling most recipies. I do not double loafs or cake mixes as I like to ensure equal amounts in the pans. However I just cannot be distracted by my kids or whatever lol
I have no experience cooking and always double my cookie batches and they come out phenomenal. I don’t ever do ratios or alternate. I cook with love! 😉

What an amazing gift idea! I always bring my new mom friends/family a pasta dish with salad, breadsticks, and a dessert and they always appreciate it so much. I meal prepped for my own family when I was pregnant, but man, it’s not easy when you’re 38/39 weeks pregnant.

I love my kitchen scale! I use it for all of my sourdough bakes, and even when dividing doughs into portions so they are all more or less the same size....
I tried some silicone liners, but I could taste the silicone in my muffins. It was really gross. My husband and kids couldn't taste it, but it was a strong flavor to me.
I always grate cheese myself after I learned that manufacturers add an antibiotic to grated cheese to prevent molding. Grated cheese molds faster than chunks. Your videos are so fun to watch. Thanks for sharing with us.

I love onion broth, I make a huge batch and can it to use as a soup base throughout the winter. It's also a good way to use up a lot of your onions.
Onion broth can be made with just skins, 1st tough layer & top / root end cut offs. I keep a bag in the freezer to collect them as I'm using onions in cooking.

Awesome cook! What a wonderful valuable gift. Tip for filling muffin tins, I use an ice cream scoop to avoid mess and drips on the sides cause I’m hopeless otherwise. Ice cream scoops are good for biscuits too.

Another great reason to shred your own cheese (other than the obvious lesser impact to the pocketbook) is that the dusting put onto the pre-shredded cheeses can take a meal from being gluten-free to not in one small choice! Love your channel! -Jen, KC

All I'm saying is that most of the major food brands of shredded cheese are gluten free, and that a simple look on the back, or Google search will help you figure that out as opposed to just swearing off shredded cheese altogether. 😊

I'm never sure. But I harvest sweet potato when the leaves start to yellow, but definitely before the first frost. I also put my hand under the soil to see if I can feel any that are large enough to use - a bit like I do with spuds.

Most sweet potatoes are ready from 90 to 110 days from planting. Try digging up one and see if they are ready. If you leave them to long they tend to grow small root hairs on them but they are still OK.

And as for the sweet potatoes - They generally take about 100-120 days, depending on the variety - or when the oldest leaves just start to turn yellow.

Girl you got me to the point of seeking out a local farm (we're in Amish country here 😉 ) that does home raised and locally butchered organic beef that does bulk orders in a 1/4 cow at a time. When you use the muffin liners you don't need to spray them. I have never sprayed them and they come off really easy
I know this was 2 years ago but I have been watch8ng tun of freezer meal preps and yu.r the one I like I have nerve damage herniated spine to name a few things with a large family whilst home educating 5 as well and I can't get to cook everyday so today I did 2 different types of meals and the prep for tomorrow done for another 4 different type of meals. The 5 days of meals I did today r in the freezer. I must say yur parents.and husband must b proud of yu a breath of fresh air in today's world.

You can freeze the onions peels and use them later for making bone broth. I do this for onions, garlic peels, and celery leaves.
I seriously LOVE how you show EVERYTHING you do. Your process of cooking, but also clean up. It’s so helpful when overwhelmed to be reminded to clean as you go! It’s something my mom always imbedded in my head lol
I've had some formal culinary training. Doubling baking recipes is tricky. It's all about science and it's not as simple as just adding double the ingredients. You have to alter the ratio of dry and wet ingredients. It normally doesn't work out well. My teacher always had us mix up multiple single batches if we needed more than one batch. We had a few big batch recipes that were ready to go into the big floor mixers but everything else was a normal sized recipe that shouldn't be doubled.
I love to bake. I never double the recipe. I will.make the recipe twice and just keep baking.
When I ‘double’ a baking recipe I measure into 2 dif bowl. The final product will rarely come out right if you double or triple a recipe intro the same bowl
I bake alot and I am successful at doubling most recipies. I do not double loafs or cake mixes as I like to ensure equal amounts in the pans. However I just cannot be distracted by my kids or whatever lol
I have no experience cooking and always double my cookie batches and they come out phenomenal. I don’t ever do ratios or alternate. I cook with love! 😉

What an amazing gift idea! I always bring my new mom friends/family a pasta dish with salad, breadsticks, and a dessert and they always appreciate it so much. I meal prepped for my own family when I was pregnant, but man, it’s not easy when you’re 38/39 weeks pregnant.

If baking is not your thing use an electronic kitchen scale and measure by weight rather then volume. Makes life so much easier!
I love my kitchen scale! I use it for all of my sourdough bakes, and even when dividing doughs into portions so they are all more or less the same size....

I tried some silicone liners, but I could taste the silicone in my muffins. It was really gross. My husband and kids couldn't taste it, but it was a strong flavor to me.
I always grate cheese myself after I learned that manufacturers add an antibiotic to grated cheese to prevent molding. Grated cheese molds faster than chunks. Your videos are so fun to watch. Thanks for sharing with us.
