Recipe :
Mushroom Curry
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 3-4
Ingredients:
300g mushrooms
2 medium onions
2 green chilies
4 cloves garlic
1” ginger
2 bay leaves
3-4 green cardamoms
2” cinnamon
1 tsp finely chopped garlic
1 tsp finely chopped green chilies
25g butter
1/4 cup cream
salt to taste
1 tbsp kasuri methi
1/2 tsp garam masala
Method:
Clean the mushrooms and cut into half.
Finely slice the onions and ginger.
In a pan take the onions, ginger, garlic, green chilies, bay leaves, cardamom, cinnamon, 1 cup water and bring to a boil. Simmer for 7-8 minutes. Cool and remove the bay leaves and cinnamon stick. Grind to a smooth puree.
Heat the butter in a pan. Add the chopped garlic and as the garlic turns golden, add the green chilies. Sauté for a few seconds and add the mushrooms. Sauté the mushrooms till they are lightly colored. Add the prepared gravy and cook for 4-5 minutes.
Add salt to taste, cream, and simmer for 3 -4 minutes. Finish with kasuri methi & garam masala and serve.
