  • Baking sugar-free bread pudding with Grandma Susi:
The pudding is sweetened with Stevia instead of sugar.
Combine in a bowl: 5 eggs, 1 tsp vanilla, 8 packets Stevia, 1 cup half-and-half or light cream, and 1/2 cup milk. Grease a baking pan with olive oil. Crumble five bread rolls into the pan. Pour the egg mixture over the bread. Melt 4 tablespoons butter in the microwave. Pour the melted butter over the bread. Sprinkle on a teaspoon of cinnamon and a teaspoon of nutmeg (optional.)
Place the pan in a 350°F oven and bake for 50 minutes, until puffy and firm. Slice and serve. Pour on sugar-free syrup if desired. Serve warm or cold. Refrigerated, it stays fresh for one week.

What a great recipe! As a life-long diabetic I don’t crave the syrupy-sweet bread puddings. Thank you Grandma Susi!

Here is a summary of the article about Stevia:
Research being done on Stevia shows it to be an endocrine disruptor, changing the release of reproductive hormones and insulin.
It destroys healthy gut flora as well as the harmful bacteria.
Maybe it’s better to stick with molasses, honey, and maple syrup as sweeteners, even though they are high-carb. www.thepaleomom.com/trouble-with-stevia/
