    You guys are the most DTE brewers on youtube. I have learned so much from you two ! Extract brewing atm but will eventually go to full mashing. Personally I'd like to see more lagers and malt/hop balance driven beers that are NOT fruity. I'd make an exception for a wheat beer flavored with elderberry syrup/fruit/flowers. Making a light lager that tastes great can be a challenge. The favorite one I made was 1:1:1 Hallertau hops ratio and extra pale malt brewed at 12C with Saflager S23. 2 weeks in primary, 1 week to clear in secondary and lagered for 4 more weeks. Ended up at about ABV of 3.5%. Was super clean and tasty. Most of my brews are at ABV 4% now, just reserve the 5% for the Australian Sparkling Ale, it needs that extra malt.

    Had an amazing cherry doppelbock (fermented with some abbey yeast) in Belgium a couple of weeks ago. I was surprised by how insanely well those flavors mixed. So I hope you're right that more styles than the sour will be getting fruited in the coming year.
