I wouldn't have taken the doors away because it would destroy the Charakter and charm of the house. When buying an oldand historic house, the goal should be to perserve its charakter and history, not renovate it to death.

I’m gathering it was a commercial use property previously. The doors would’ve created a reception area infront of the lobby space. However the main reason would’ve been to reduce the draught between the front door& bay window and the stairwell+ all those corridors leading off.
Removing a dirt area where you can store, coats and shoes isn't a very smart idea. In Winter is this room a total win. The victorian people weren't stupid. No one wants to live in house with air flow all the year around.
