Smoked Boneless Chicken Thighs - How to smoke chicken thighs to get the best bite through skin!

  • Want to master tender juicy smoked chicken? Start with these smoked chicken thighs. We deboned them and the we will show you just how easy it is to get the best results from your smoker. Chicken thighs are very forgiving because they are dark meat and have more fat in the muscles. If trimmed right and excess fat is trimmed these can be great for people that do not care for dark meat.     Start with Bone in chicken thighs and Debone.
    Pat very dry. The key to crispy bite through chicken skin is dryness.
    Add a fat back, either olive oil or butter. Put a thin layer on the chicken skin.
    Apply your Favorite Chicken Rub.

    Smoked at 275 for about 1 hour then started increasing temp to 325-335F
    Cooked at 325 for 30 min and coated chicken thighs with a thin coat of BBQ sauce.
    Smoked at 335 for 20 more minutes and pulled. Skin was crispy and bite through and full of flavor.

      I got that plate about 10 years ago. Started cracking but still together. We will see how long it lasts. Think I’ll make a good solid cutting board when it finally breaks to serve on.

      Well, how did yours turn out? I like them because they are a real forgiving piece of chicken. You really have to try to make them inedible.

      we ran them too low. 250 on the pellet grill.' but we were on our 3rd time and a big storm came through so we know what to do come this weekends comp.

      Those were some good thighs. You know sometimes you just get the right selection of meat and those were a good cut of chicken.
