Easy Carrot Muffins
Ingredients
2 cups flour
2 teaspoons cinnamon
3 teaspoons baking powder
1/2 teaspoon salt
3 eggs
1 cup vegetable oil
1 cup sugar
1 grated peeled apple
2 cups grated Carrot
1/2 cup raisins
Instructions
Grease or line a 12 cup muffin tin
Preheat oven to 375°
Whisk flour, cinnamon, salt and baking powder in a large bowl
In another bowl combine the eggs, oil and sugar
Pour wet ingredients into dry ingredients and stir until blended
Fold in carrots, apples and raisins
Fill muffin tin with batter
Bake 25 minutes or until a toothpick comes out clean and tops are lightly brown
