Moist and Lightly Sweet Carrot Muffins

- My carrot muffins are made with freshly shredded carrots, brown sugar, and warm spices. They are easy to make (no mixer!) in a matter of minutes.

Ingredients
1 ¾ cups all-purpose flour (220g)
½ cup granulated sugar (100g)
½ cup light brown sugar, firmly packed (100g)
2 Tablespoons cornstarch
2 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
¾ teaspoon table salt
¼ cup unsalted butter, melted (57g)
¼ cup neutral cooking oil (I use avocado oil, but vegetable or canola would also work) (60ml)
1 large egg, room temperature preferred
1 teaspoon vanilla extract
1 cup sour cream (240g)
1 ¾ cups shredded carrots (198g)
1 Tablespoon turbinado sugar (for sprinkling, optional)

Instructions
00:00 Introduction
00:15 Preheat oven to 425F (215C) and line a 12-count muffin tin with paper liners. Set aside.
00:25 In a large mixing bowl, whisk together flour, sugars, cornstarch, baking powder, baking soda, spices, and salt.
01:37 In a separate small mixing bowl, whisk together melted butter and oil.
02:25 Add egg and vanilla extract to butter/oil mixture and whisk to combine.
02:48 Add sour cream and whisk until well incorporated.
03:40 Add wet ingredients to dry ingredients and use a spatula to gently fold together (batter will be very thick!). Once the batter is about 50% combined, add the carrots and continue to gently fold together until just combined. Do not overmix the batter or the muffins could be dense/dry.
05:13 Evenly divide muffin batter into prepared muffin tin (each liner will be mostly full). Sprinkle with turbinado sugar.
06:13 Transfer to 425F (215C) preheated oven and bake for 8 minutes, then, without opening the oven door, reduce the oven temperature to 350F (175C) and bake another 10-12 minutes, until muffin tops are beginning to turn a light golden brown and a toothpick inserted in the center comes out clean or with moist crumbs.
06:40 Allow muffins to cool in the tin for 5-7 minutes, then carefully remove to a cooling rack to finish cooling before enjoying.
Notes
Carrots
You can grate your carrots using a box grater or use a food processor. I prefer a finer shred on mine and usually use the “shred” setting on my food processor and then pulse the carrots for several seconds using the classic blade attachment. I usually peel my carrots before using. I do not blot the carrots before using.
Storing
These muffins are best served the same day they are made, but they will keep in an airtight container (cool completely before storing) at room temperature for 2-3 days. Muffins may also be tightly wrapped and frozen for up to 3 months.

That’s what would happen in an ideal world. I grew up in a family with a brother a year older than me and a sister four years younger than me. At this stage in the game where Sam is, me and my brother were thinking up ideas to convince my parents to put our new sister up for adoption. Don’t worry, we ended up keeping her. The benevolent, big brothering stage doesn’t come for many years. It’s more like cats and dogs for the first fifteen years or so. 🤷🏻♂️

This is the first time I've seen someone put cornstarch in a muffin mix...however, I would omit the baking soda because I don't like the aftertaste it leaves in my mouth. And for the sour cream, I will replace it with plain Greek yogurt (my taste). I'm going to make them for sure and I'm going to use your method of grating the carrots - not that stupid! The baking soda shouldn't leave a taste. If it does you may need a new box or try switching brands. :)

when I want to bake something I forget the eggs need to be room temp...and I keep my house on the cooler side, so it takes forever for the eggs to come to room temp. So to fix that problem I pour really hot water into a bowl and set the eggs in it. the water isn't hot enough to cook them as it cools off quickly with the cold eggs...that way by the time I have all the ingredients prepared to begin, I'm ready to go....I have noticed a difference in taste when I use the avocado oil, it tastes better and somehow it doesn't have that oilly feel.
I’ve notice the majority of baking recipes use light brown sugar as opposed to dark brown sugar. I know that the difference is just the amount of molasses added to white sugar. It seems like an inconsequential difference. Do you know why light brown sugar is preferred over dark brown sugar for baking?
In this recipe in particular the difference would be rather insignificant, the muffins may be a bit flatter on top, but will still taste good. In some recipes like cookies or cakes, I sometimes don't like to use it because it adds enough sweetness and flavor that it will detract from the flavor I'm trying to showcase. Even though light brown sugar has less molasses, in these types of recipes (cookies and cakes) it actually increases the depth of flavor. :)
I’m on the prowl for a thin whisk just like the one you used to mix wet ingredients, also a good one-piece spatula. I looked to see they were on the list of products used, but didn’t find them😢 Or I don’t know where to look, would appreciate it so much if you could tell us brands and/or where you got them, if you can. By the by, love this carrot muffin recipe idea, will try immediately.

I found a one piece black spatula at Target. I have no idea what brand it is. The blade is not as stiff as others. It must be working for me because I have bought several identical ones over the years.

Can I sub margarine for the butter? And can I put in less sugar? What about sour cream? I can’t have dairy! I know that I’m changing the recipe I just so badly want a good carrot muffin but this looks incredible.

The margarine could work, but unfortunately I don't know a good dairy free substitute for the sour cream. :(
I have felt that your were pregnant, on the last few videos...but I figured you would tell us if you wanted us to know....but your skin and hair shine wants to say I have a bun in my oven....I am going to try this recipe....I don't have that topping sugar, but I DO have some finishing sugar, but could I use brown sugar instead of that fancy sugar?

Discard is the part you throw away before you feed it. Starter is your main jar of sourdough. It’s “active” when it’s rising. 😊
