Pasta with lentil sauce | Vegan Bolonese | tastes just as good as the original | protein & vitamins

Today I have spaghetti with lentil bolognese. Since I've been following a meatless diet, I've been eating more lentils and legumes and of course discovering great healthy recipes. This recipe is one of my discoveries 😍
INGREDIENTS:
300 g red lentils (or green lentils)
1-2 red onions
1-2 carrots
2 green peppers
2 cloves of garlic
1 tablespoon of tomato paste
1 teaspoon grape vinegar / balsamic vinegar
1 tablespoon soy sauce (if available)
400 grams of tomato puree
1 teaspoon of thyme
1 teaspoon ground red pepper (smoked if available)
1 teaspoon Paprika
Salt (discard according to the salt content of soy sauce),
Black pepper,
about 300 ml of water
3 tablespoons (vegan) Parmesan / Tulum cheese
about 100 ml of pasta water
1-2 handfuls of chopped parsley
