Popcorn Chicken Recipe
Chicken marinade:
3 cloves minced garlic
1 tsp ginger
1 tsp sesame oil
1 tbsp mirin
1/2 tsp sugar
1/4 tsp kosher salt
1/8 tsp black pepper powder
2 tsp Five spice powder
2 tbsp soy sauce
Dredge:
I used 1/3 cup white rice flour and 3 tbsp cornstarch
1 egg + 1 tbsp water
Fry in a high smoke point oil, 3 minutes
Dust with more 5 spice powder
Fry up Thai basil for a few seconds

1/3 cup is about 5 1/2 tablespoons! And if you leave the basil out to dry for a couple hours before you fry them then the oil won’t splatter as much :)

Just tried the chicken recipe. To make it more keto friendly i used almond flour and arrowroot powder instead. Very tasty. Thanks for the recipe!
2 things I was thinking regarding the cooking process: Normally with egg dredging, I would put the chicken in to the egg to coat, but because of the small pieces, I was wondering if it may be better to just pour the egg into the chicken and mix gently? Also, with the Thai basil, would it help to gently crush the stem to release some of the moisture beforehand?
For me, Almond Boba and a Vietnamese shredded chicken sandwich from Hanco's in Brooklyn is the most incredible combination on the planet. I miss them sooo much since we moved. If you could see what the ingredients are, and recreate it, I would love you for all eternity :-)
