Great recipe. I like the addition of garlic to take it to another level. A tip about boiling eggs: add 1 tsp of salt to the water and the skins peel off easily. It works every time for me.
I always used dill pickle or pickle relish instead of the lemon juice. Strain the pickle relish or save some pickle juice for thinning the mix if it is too dry. To spice it up, put a teaspoon of Sriracha or Soy sauce. In the hottest of summer days, we use small chunks of pineapple to replace the lemon juice. Great way to use up the leftover pineapple from your Smoothie or Hawaiian Pizza. The BBQ King of the family always puts bacon bits in his. To make it better than deli, it has to have lettuce or spinach on it! I will try the lemon juice this afternoon.

You do not have to cover the eggs, steam is far more efficient than boiling. Set the timer for "O" if you want soft boiled eggs. Use the manual pressure set at medium if your cooker has that option. Adjust the level or add a minute by trial and error to determine what cooked egg results you like best. I have a Duo on high and I like the setting at 2. Just like @SalongirlGardens said they almost peel themselves. Release the steam and drop them into cold water immediately after the beep to get rid of the green yolk ring. If you let the pressure drop naturally, you will have the green ring and they will be hard boiled. I used to pull eggs from the coup early in the morning...

I always use organic eggs too and I've noticed that organic eggs are more difficult to peel because when I try and peel them the egg white sticks to the shell even when I let them cool, Crack the shell and run them under cold water cold! 😕 So this morning I saw your video on homemade egg salad sandwiches I thought "maybe he'll show me a better way to peel hard boiled eggs with the shell easily coming off" "His recipes are always excellent and so good anyway" So the magic key to perfectly boiled eggs is putting them in ice water for a few minutes!👍This recipe is easy and so yummy I'm gonna have to try it! I've been getting deli egg salad which is good but homemade is much better and healthier plus I can control the ingredients I use which will be all organic! So thank you! I won't be eating anymore deli egg salad 😊

Looks delicious! I crack the egg shells when they've come to the boil and are cooling. It makes them easier to peel. Adding some cooked prawns takes things to a different level! For me anyway!

You should rub the dry toast with garlic, tomato and extra virgn olive oil and then add the egg salad mixture with a few chopped capers for extra seasoning. 😂🎉🎉
I have recently seen a short video about the Tojáskrém, a Hungarian open-faced egg salad sandwich which has a combination of butter and sour cream. Could using butter and sour cream instead of mayonnaise be a good idea?

Agreed. I tend to put just a smidge of onion to give a hint of taste but not permeate everything.
Me too. I'd only use the chives, no onion.😊
I have read that soaking the chopped onion in cold water before adding to the recipe helps to soften the "bite".
