    Hanging the pheasant by the neck and letting it age is an old practice. A freshly killed pheasant will be too dry when cooked fresh. To circumvent that, you leave it hanging, unplucked, for about four days in the summer and let the meat age. The process lets the meat tenderize and the flavours develop. In french we say Viande Faisandé, Faisan meaning pheasant when we talk about aged meat.

      It's still done to this day, many people still let pheasants hang for a week or so to flavor the meat. Even restaurants that serve pheasant will note on the menu if its aged of not

    24:23 Yeah, the casting department really did well getting Fumi Nikaido on board for the show. She's quite famous in Japan, both as an actress and as a model. She's a really versatile and compelling actress, kinda like Anne Hathaway or Natalie Portman.

    I love the finale when Blackthorne realizes the weight of words in that culture, and that the gardener's death was his fault. It's also beautiful when Mariko explains Fuji's family swords story to him

    Remember the lesson Toranaga taught to his son - "learn to fly them at the right game, and they will do your hunting for you." This is how all of Toranaga's action based on. He fly everyone - be it his family, his retainers, and his enemies, like a falcon.

    I may be mistaken but I think that Muraji (Toranga's spy in the village) ordered the gardener Uejirou to be the one to remove the rotting pheasant knowing that Uejirou would then have to die for defying Blackthorne's orders to not disturb the bird. Muraji would then be able to make it look like Uejirou was the spy in the village but Yabushige would not be able to question him since he had already died.
    It is possible that Mariko knew all of this. She told Blackthorne, "Uejirou announced that he had been sick lately so he volunteered. He died for a greater purpose. It was a better end than he could have hoped for." Uejirou's "greater purpose" that Mariko refers to could be that he died serving Toranaga and helped to keep the identity of Toranaga's true spy secret.

    Lady Ochiba's model is Yodo-dono, a very fascinating character. By the time the Taiko died, all the senior males in his clan were dead, and the de facto head of the clan became Yodo-dono. She was said to be a beautiful and intelligent woman who did not shy away from exercising power. Yodo-dono's primary goal was to secure her son's inheritance and she saw Toranaga/Ieyasu as a major threat to her son. It must be remembered that the Taiko and Toranaga were not friends but rivals.

      to add to that, Toranaga was the only one that actually won against Taiko in a fight but after that becoming Taiko's most powerful ally. Of course, by doing that becoming more powerful and part of the deal being that Toranaga son to be adopted by Taiko as the successor.

    Fuji is a young, proud noblewoman. And she knows exactly what went on in that house built of paper. Her uncle belittled her, and she fought right back with wounding words.

      I agree with you, Fuji knows perfectly what went under her roof and who slept with who.
      Yet in her conversation with Buntaro she doen't imply Blackthorne 'pillowed' with Mariko. In this 1600 Japan using the services of a courtesan was a common thing. And since it's actually Mariko's cover story Fuji just goes with it : "He prefers the company of other women" = courtesans

      @@sld1776 I see your point and it's one way to read this Fuji-Mariko interraction. Yet I'm not convinced Fuji asking Mariko if the Anjin is in any danger is this directly related to her previous exchange with Buntaro. I understood it more like she (Fuji) does not known every details of the situation and ask Mariko (who obviously knows all about it, plus can 'read' Buntaro better) the real extent of the damage, what does she (Mariko) think Buntaro knows or suspects.

      @@vincentdesjardins1354 It comes down to Fuji's expressions during her interaction with her uncle, who was being gross and disrespectful towards her; is she explaining herself, or is he trying to hurt Buntaro? Notice that Buntaro reacted by becoming jealous.

    Ishido said in one of the earlier episodes that he came up from a peasant to be caretaker of Osaka Castle. It seems like something to be proud of, but other characters may treat him a certain way because of it.

    blackthorn had made a rabbit meat stew for them all to eat. he must have looked forward to that so much since the japanese eat mostly vegetarian dishes with some raw fish at times (that later becomes sushi). before he had tried natto with mariko and fuji so had hoped that they would try one european dish, he must have felt hurt by the response he got.
    what he did with the pheasant is an old thing to make the bird meat taste better. like he tried to explain was that there was not a fixed time that it should hang so everyone had his own idea for how long it should hang before cooking. if you prepaired the bird and cooked it at once the meat would be dry and no taste. if you waited for some time the meat became tender and full of flavour.

    7:33 The facial expressions of the actors in thse series are perfect. Fuji is the best. Look at her face when she realized she inadvertently gave away that Mariko pillowed with Blackthorn. Lady Ochiba and Omi have great dace expressions too

    I love how, despite everything Blackthorne has done for Toranaga-sama so far all had an ulterior motive (either to make it out alive in the first 3 episodes; or to ingratiate Toranaga-sama to himself so that he can regain his ship and crew and hopefully get him to help with his war against the Catholics so that he could return to England and make a name for himself) that the show still makes a point to show that at his core, he is still a good man (except for all the Catholic settlements he plundered and put to the torch with his original crew).
    And i love how his culture shock and his refusal, at this current point, to just acknowledge their different value systems, had real, tangible, and dire consequences.

    This episode was incredible, maybe the best of the show.
    The diner scene tension is insane, you understand that even if John is learning japanease culture he will never master it, and that ending with the earthquake and Lady Ochiba's return that flip the odds. So much good scenes.

      Swinging a 3-lb piece of sharpened steel for _maybe_ more than an hour, fending off and killing probably more than a hundred men intent on killing you in the alleyways and streets of Osaka -- *deep* in enemy territory -- whilst maintaining situational awareness in the middle of the night. And he *_still_* managed to evade the Osakan forces.
      It's been weeks now and I still can't wrap my head around how ridiculously challenging that was.

      @@alcor4670even if you consider that the forces he met are not all wearing armour and most of those would likely be Ashigaru and not as well trained as him; the numbers are still overehelmingly against him. Even if he somehow managed to find 20 ronin to aid him.
      But then again, the guy is smart. Instead of staying on the dock where he will eventually overewhelmed, he made for the alleyway where they have to chase him and the numerical advantage is somewhat negated as he cant be sureounded as easily.

      @@khaii13 also in the book is explained that Toranaga prepared it in advance the Osaka town with hundred of "ronins" with the task to create chaos, block the streets and secure exit routs. Buntaro was benefiting of this support and probably after the initial engagement with heavy losses he was hidden and supported with horses, guides, provisions and guards.

    So, ‘Mariko’ and her family’s history is a tough one. The ‘honorable’ (from the Japanese mindset) thing for ‘Buntaro’ to do is be endlessly mean to her. If he shows affection to her publicly, then it’s like he’s endorsing the murder ‘Mariko’s’ Dad did and killing your liege lord is the worst of the worst crime under the samurai code. Death, for ‘Mariko’ would be a release, everyone in Japan knows who she is and what her family has done.
    From ‘Buntaro’s’ point of view, ‘Mariko’ should be grateful he’s spared her. He’s, essentially, frustrated and confused why she gives him the ‘ice’ treatment.
    It’s a real unstoppable-force-meets-an-immovable-object situation.
    It’s also, for sure, a ‘Scarlet Letter’ situation.
    You’ll have to figure out why ‘Buntaro’ keeps her around.
    In the book, when ‘Toronaga’ is sailing away next to the Black Ship, ‘Buntaro’ is on the dock/jetty, stripping to the waist to commit seppuku. ‘Toronaga’ shouts at him that he doesn’t have permission and to run.
    I have no idea why they left that out.

    In the novel, a lot of lives are self-taken. Based on their code, it's like restarting a character in a video game.
    The next life they lead may bring them closer to a perfect life with honor. (If not, restart....)

    Most Japanese in these periods practiced Buddhism or Shinto. They were pescatarians who ate only fish and vegetables and eating other meats was considered unclean.

    Remember in E2 when Father Alvito asked Mariko if those 'dark thoughts' were still with her? He was referring to her desire to commit seppuku which she prob revealed to him during confession that we learned about in this episode during the dinner scene.

    Lady Ochiba is the queen regent. Ishido calls the shots but can be easily overruled by her. Which put Ishido on notice in the last scene.

    Mariko and Buntaro are both trapped in a marriage that makes them miserable. They can't divorce, they can't die, they can only escape each other when they're doing their duty serving their lord. They'd both be happier with other people but they're simply not allowed. It's a tragic situation for both of them.

    On the Western vs Japanese cuisine, at this time in history, the Japanese were far cleaner. European people, cities and food stunk. The food ‘had’ to stink to break through the stench of everything.

    This may sound counterintuitive, but the English practice of 'hanging' pheasants in a cool climate causes decomposition in the bird's digestive tract, forcing out oils that infuse the meat with flavorful fats. The feathers retain moisture. When properly trimmed and gutted, the roasted bird has much better flavor than a 'fresh' pheasant.
