Chicken Alfredo Casserole Ingredients
3 chicken breasts or 3 cups shredded chicken
16oz Penne pasta
2 cups or broccoli
1 cup or 63g grated parmesan
3 tbsp Chopped Oregano
3 tbsp Chopped Basil and stems
3 tbsp Chopped Flat leaf parsley and stems
Fresh or dried thyme sprig
1 cup or 130g diced red onion
6 slices or 210g bacon chopped
2 tbsp or 30ml vegetable oil
3 large handfuls of spinach
5 minced cloves of garlic
1/4 cup or 63ml dry white wine
1/4 tsp red pepper flakes
5 tbsp or 70g butter
6 tbsp or 48g flour
2 cups or 500ml chicken stock
2 cups or 500ml heavy cream
Dash of black pepper
Salt to taste
3 cup or 330g mozzarella
Bake in oven at 375˚ F or 190˚ C for 20 to 25 minutes or until the cheese is bubble and lightly golden brown.

I learned to make basic roux when I was a kid. Mom used it to make my favorites: creamed tuna with peas on toast and SOS. Now I make cream soups and gravy with roux. I get lovely flavor from deglazed pans, some butter, flour and seasonings. It ain’t fancy at all! It’s that same gravy Mom always made. Easy! Yum!

Seriously I figured this recipe was just another regular recipe. But watching the video I came to know that you Johnny cook just as I love to do. As much ingredients as possible all fresh and personally hand prepared. No shaking in dried herbs from a small jar. Just all the flavors with twice the fun in cooking. The herb stem bouquet garni, was new to me. Thank you! Just an excellent, refreshing video of a fantastic recipe.

I love recipes like this. I can think of many variations that would be equally delicious: different cheeses, sliced sausage, ham, mushrooms, peas, or other veggies, bow tie pasta or other forms of pasta, etc. I think I might be more inclined to mix most of it together instead of layering it. I don't think it would make much difference. The genius element here is the BACON. I also love the spinach and fresh herbs in your recipe. My herb garden didn't do as well this year. It's a very small area. I may just pull everything out next spring, even the perennials, amend the soil with a lot more compost, and start again.

Looks good. I have a Sous Vide machine, so will poach the chicken in it’s own jiiuces. Might finish with Pqnko bread crumbs instead of extra cheese.
