Everything looked great, fun video idea. Will keep an eye out for that Japaness BBQ sauce! We also love kabocha squash. To prevent it getting that too dry texture, we cut the squash in half into two sides, remove seeds, place each half cut side down on parchment paper on baking sheet, and roast at 375ºF until soft. That way the skin serves to keep moisture in the flesh as it roasts, and the sweet flesh pulls away from the skin very easily when done (we usually don't eat the skin, too much fiber). Sweeter and moister than the method you used.
I am also obsessed with kabocha pumpkin and, fun fact, kabocha just means pumpkin in Japanese. This variety does come from Japan, I was just there on my honeymoon over September and I had quite amazing kabocha over there 😍 I think it’s pronounced with a “ch” as in “chat” not as in “cat” 😍

More Crystal, please! Love seeing her. I also love kabocha squash the most. It’s all about Thai pumpkin curry for me with kabocha. There are also some amazing Brazilian recipes with it. They also refer to it as pumpkin.
i'm with you, crystal - kabocha squash is the best! where i live we can get it most of the year, and it's a staple in my house. my kitty likes it too - you might try giving little bits (cooled of course) to your cats. we eat the outer peel too!
