▶️ CHICKPEA AND QUINOA RECIPE INGREDIENTS: (3 to 4 servings)
1 cup / 190g Quinoa (soaked for about 30 minutes/strained)
3 Tbsp Olive Oil
2 cups / 275g Onion
200g / 1+1/2 cup Carrots
1+1/2 Tbsp / 19 to 20g Garlic - finely chopped
1 Tsp Turmeric
1+1/2 Tsp Ground Coriander
1 Tsp Ground Cumin
1/4 Tsp Cayenne Pepper (Optional)
1/2 cup / 125ml Passata or Tomato Puree
1 cup / 200g Tomatoes - chopped
Salt to taste
200g / 6 to 7 cups Spinach - chopped
2 cups / 1 Can COOKED Chickpeas (liquid drained)
350ml / 1+1/2 cup Vegetable Broth / Stock
Ground Black Pepper to taste (I have added 1/2 teaspoon)
Drizzle of Olive Oil (OPTIONAL) - I have added 1 Teaspoon of organic cold pressed olive oil
▶️ METHOD:
Start by thoroughly washing the quinoa until the water runs clear and then soak in water for about 30 minutes. Once the quinoa is soaked drain the water and let it sit in a strainer. Also, drain 2 cups of home cooked chickpeas or 1 can of cooked chickpeas and allow it sit in the strainer to drain any excess water.
To a heated pan add the olive oil, onion, carrots and 1/4 teaspoon salt. Adding salt to the onions and carrots will release it's moisture and help it cook faster so please don’t skip it. Fry on medium to medium-high heat until it's golden brown. You will notice the quantity of the carrots and onions have shrunk in half. Add the chopped garlic and fry for about 2 minutes or until fragrant. Add the spices (Turmeric, Ground Coriander, Ground Cumin, Cayenne Pepper) and fry for a few seconds. Then add the tomato puree or passata, chopped tomatoes, salt to taste and fry for about 3 minutes or until the tomatoes break down completely and form a thick paste.
Add the chopped spinach. Mix well and allow the spinach to wilted, It will takes 1 minute or so. Then add the soaked quinoa, COOKED chickpeas, vegetable broth/stock and mix well. Bring it to a vigorous boil. Then cover the lid and reduce the heat to low. Cook on low heat for about 20 to 25 minutes or until the quinoa is cooked.
Once the quinoa is cooked, uncover the pan. Increase the heat to medium or medium-high flame and fry for about 2 to 3 minutes while stirring frequently to cook out the excess moisture. Turn off the stove. Add freshly ground black pepper and a drizzle of olive oil. Mix well. Serve hot.
▶️ IMPORTANT TIPS:
👉 Thoroughly wash the quinoa, this will get rid of any impurities/gunk/bitterness and will give a cleaner taste to the quinoa
👉 Every stove is different SO ADJUST THE HEAT AND COOKING TIME AS REQUIRED
👉 Adding salt to onions and carrots will release it's moisture and will help it cook faster so please don’t skip it
👉 Sometimes one batch of quinoa can be more dry than the other, SO ADJUST THE COOKING TIME ACCORDINGLY

Hello Friends! There’s a detailed written recipe for you in the description box of this video. As always, I love to hear from you guys! Let me know if you try this recipe 😊
Where is the description box? I can’t find the recipe. It looks delicious. I’d love to make it.
Hi alternative for vegetables broth?
Cook quinoa first until the water boils and use the remaining water as broth. That's how I do it 😜 Its even faster that way but you use 2 utensils instead of one.
I’m at the store right now to purchase what I’m missing to make this. Looks delicious and simple enough to make…can’t wait!! 😋 Thank you!! 💚
Please let me know where the description box is
I've made this twice so far. Love it! The second time I didn't have chickpeas so I used lentils instead. It still came out great.
So awesome to hear that! Glad you enjoyed this recipe 😊
Thank you very much for showing me that being vegan does not mean to buy expensive products. Me and my body are vibing all your delicious recipes ❤
You're most welcome! So glad you like the recipes 😊
i think the spinach is overcooked here. To avoid this, just cook the quinoa in advance in a different pot then just add it so the other ingredients are not overcooked.
I’d certainly make this but I’d add the spinach toward the end so it stays bright green.
Loving the one pot meals. I particularly appreciate the liquid volumes being so carefully worked out so everything is done perfectly and not soupy or mushy, not just on this dish but every dish. You get all the details just right and it's much appreciated.
Thank you so much! 😊
A grain, a green and a bean 😍
😊Vxa❤
i think it's better to put the spinach when quinoa is almost done so it's not overcooked. Just a suggestion but it's a great recipe. thank you.
I just finished making this dish exactly how you described. The quinoa has cooked nicely. It is not crunchy to the bite, and the tomato gives it such a sweetness to it that I am hooked. This will be my go to dish.
Thank you! I’m so happy you enjoyed it 😊
Hello 👋 I made your recipe today and it was delicious. The only thing I changed was I brought the organic tri-color quinoa from target. It still came out delicious. Thank you for a simple and healthy recipe. 😊
So great to hear that! Glad you enjoyed this recipe 😊
Thank you for all of your videos. You don’t waste time on long intros and your videos are beautiful and peaceful , very clear and to the point. You don’t make them about you. Your music is great and we all appreciate the written descriptions of the recipes and the notes. I made this dish today and it came out great. My one request is that you put your recipes in a link that can easily be printed. I’m not good at technology so perhaps there is a way to print them that I don’t understand. Thank you again for a wonderful channel.
So great to hear that! Glad you enjoyed this recipe ❤️

I made this tonight. We live rurally, and the ‘fresh’ spinach was scary. I used a 238g bag of frozen organic leaf spinach. It was truly delicious. Thank you so much. ❤❤❤

Thank you! 🤗

🌟Wonderful content, the really its looks delicious foods, like it. Good lucks and more success my friend.🙏🙏❤❤
Good recipe . I have everything except spinach and no shopping till next Saturday so I'll make the dish without and serve lettuce on the side . Thank you, and the music was a treat .
Hope you enjoyed it. I don’t eat spinach much, but I do love lettuce cooked! So if it happens again to you, shred the lettuce if it’s Romaine, Cos or Little Gem, and add to the dish. Lettuce is lovely cooked. Not sure if this would work with iceberg, but it might be OK if not stewed for too long. ❤
Queda delicioso!
Mil gracias por tus recetas saludables, me encantan.
Hoy lo preparé 👌

Made this for the second time. It’s a lovely, fragrant, wholesome, healthful dish. If you’re not vegetarian, grab a cooked chicken on your way home from work and pull some of that chicken onto your plate. If you’re single, divvy it up into zip lok containers. Put 2 in the freezer and one in the fridge for the next night. ❤
Very tasty and delicious food good sharing ilk it new subscribe ❤
Vegetarian yummy 🤤
Thank you.
Most welcome!
That's a really great recipe😍😍
Shopping for ingredients today, thank you. Question, do you take the skin off the chickpeas in your recipies❓they often come off when I rinse them.
No, I don’t take the skin off the chickpeas. Would love to hear how it goes 😊
Yum! Will try this
thanks for sharing

Thank you! 😊
Thanks
What brand is the wok that you are using please
Yummy
Easy❤🎉
May I know the wok material and brand which you are using??
I wonder....would this work with kale instead of spinach ?
Sure you can 😊
Guess what I'm having for dinner tomorrow.
My thoughts exactly! ❤
Looks yummy but couldn’t find the macros
Hi, have you figured out the nutritional information for your recipes? I'd love to know how much protein and calories are in each recipe. Thanks!
Hi which pan is this .which company
Can I add water instead of broth?
❤
Looks great, but by the time you get your quinoa cooked, you get everything else overcooked and damage the heat sensitive nutrients in all those nice vegetables, I would re-design this where you cook the quinoa separately and mix together at the end for better nutrient preservation.
If I can’t have tomatoes, what would you recommend as a substitute?
@foodimpromptu any suggestions?
You can skip the tomatoes and add lemon juice after cooking. Please note the end taste will be different than the original recipe but still be good 😊
I would try this. I just wouldn’t cook any of it. Maybe the carrots/ onion and spices.
This is Asian Indian technique and spices for making entrées.
👍😋😋👌🙏🥂
I would cook the quinoa first then add
Unfortunately i always have problems as cannot eat onion or tomatoes, cannot find anything to eat.
Why 30 minutes cooking? Is it the quinoa that takes long?
Can't read the ingredients... Too small
That s incredibble! Adore this recipe ! Looks really great ! Hope you will enjoy our video as well!🍎🍉
I don't think that's frying, it's sauteeing
I'm definitely not a vegan and I have no issue with people eating the way they choose. Personally, I used this recipe and added it to my meal prep. I add grilled chicken breast and put that with this like a bowl. It works great for post workout meals with, or without the chicken. And I have done both!
Do you have the nutritional facts for this recipe? 😊
Looks dry for my taste.
God I wish people would stop doing videos like this with the over exaggerated sounds of cutting and cooking along with the music. I’m sure the food is good but the way it’s presented is annoying as F.
