I often make this dish but never use sugar, and use nam Pla and garlic and shallots. One of our favourites using chicken thigh, breast, or any protein. Love your video! I love learning new recipes all over Thailand. (30 so e trips since 1987)

Hi Mark. I was just browsing through UA-cam channels about food. I have to say that I really loved the very authentic approach to sharing your love for good grub. I have already tried some of the recipes (ผัดกระเพราไก่ being a personal favourite) and the fact that you use the ingredients and utensils you'd find in a real Thai kitchen makes it easy for a Bangkok-based farang like me to go look for the ingredients and reproduce the wonderful dishes. I really like how you don't try to embellish the setting, but focus on the important thing... Cheers!

As a Thai, I approved Mark' recipe. This is how we cook. Simple and delicious. You need enough heat to cook it right. The kind of chili matters too. I like "pick kee nu" but you can just use what you can find as the holy basil hold the key here. You can make this dish out of other meats. Beef is less popular in Thailand as it is expensive and many Thais do not eat beef but it makes wonderful "Pad kra pao". Minced pork is more popular choice than chicken. Tip: this dish goes very well with Tom Yum.

Wonderful and tasty recipe! I cannot find holy basil where I live so I ordered from Amazon Dried Holy Basil and I steeped a nice handful in a few cooked down fresh tomatoes first then added to the chicken, garlic & peppers, I did add a nice splash of fish sauce in the end..I love that flavor, I can't help it! :) So good, I could eat it every day! I'm going to try a variation on that theme. I'm in weight loss mode so I'm going to try to cut back on the oil and use a spray oil. I can get fresh basil but I never knew how to use it until I saw this. Thanks for the vid Mark !!
I cooked it based on your recipe but without so much oil and the egg, also I only used oyster oil and soy sauce and changed the chicken breast into chopped chicken legs, in the end I added some toasted cashews as well, it tasted so well! You are a nice cook!
It took a while for me to find a source of holy basil here in the UK, but I found a supply of dried holy basil. I love this combination of ingredients, but I always add a dash of fish sauce as well. Thank you for your video upload - it was inspirational. 2 years later, I still cook this combo regularly. I dice the chicken quite small (around 1/5" or 1/6"). Minced chicken doesn't work - it forms a large unmanageable mass. My partner Anne doesn't eat fried eggs, so hasn't enjoyed that part of this delicious combo.
I saw you using Chinese garlic (garlic that grown in China and imported here in Thailand) which is larger in shape but weaker taste and less fragrant and less spicy than Thai garlic. I reccomend using Thai garlic instead because it's more authentic and taste and smell even better and it's available almost every Thai fresh market , weakend, modern super market and it's cheaper thatn Chinese garlic.
Thanks for the quick and easy recipe. I tried it out today and it was great! I was about to skip out on the egg, but I'm so glad I didn't. Pairs so nicely! I put too little basil though ^.^; Also, you look like Christian Camargo in the show Dexter.
I'm Thai. I confirm that Mark's dish is Thai style. (although Thai kaprao receipe use fish sauce not soy sauce, but his cooking is Thai skill)

I saw you using Chinese garlic (garlic that grown in China and imported here in Thailand) which is larger in shape but weaker taste and less fragrant and less spicy than Thai garlic. I reccomend using Thai garlic instead because it's more authentic and taste and smell even better and it's available almost every Thai fresh market , weakend, modern super market and it's cheaper thatn Chinese garlic.
This is the food I ordered the early days experience in Thai food.and I got hooked
