  • Bangkok, Thailand - Everyone loves to eat the spiciest dish at Mark Wiens restaurant, Phed Mark. But if you are looking for an authentic pad krapao (Thai holy basil stir-fry) in Bangkok, then this one, for me, is without doubt the best pad kra pao in Bangkok. many people thing pad Thai is the national dish of Thailand, but the reality is, pad gapao takes that spot and is one of the most popular Thai street food in the entire country. This restaurant is on the Thonburi side of he river, where you feel like you are escaping the tourists and walking into the real Bangkok. Tucked in a little side road is Original Pad Kra Pao 1993 and it is worth coming here for. The best way to get there is to get off at Wongwian Yai BTS station and walk the few minutes it takes to get to the restaurant.
Pad Kra Pao is a popular Thai dish that is known for its fragrant blend of basil, garlic, and chilies, stir-fried with ground meat, typically pork, chicken or beef. The dish is usually served over steamed rice. Pad Kra Pao is a quick and easy meal, served in minutes, so it really is Thai fast food.

This restaurant provided such tasty, big shrimp Pad Kra Pao, which was relatively inexpensive. Combining dried chili and fresh chili gives the aroma and flavor of Pad Kra Pao better. I am in Bangkok for the first time this week, and I had saved your video under my Google Maps recommendations. To say that I was amazed and impressed by this Pad Krapao restaurant, would be a severe understatement. I was absolutely blown away by the flavors of their dishes. I’ve had Pad Krapao many times, but never anywhere near this good. I loved it so much, I will be going back today for lunch. Hi Joe, I'm a Thai home cooker.
I really appreciate that you love Pad Kra Pao.
I have to say something you said at 6:30
Yes, You can use "Light" Soy Sauce with Kra Pao sauce
but "Palm sugar" is a bit strange for me.
Kra Pao sauce is basically made from 2 core ingredients.
    1. Fish Sauce < Soy Souce had a different aromatic
    2. Sugar (Granulated white or brown, but do not use palm sugar)
    - MSG, Stock, Oyster Sauce (optional)
Sometime we put Seasoning Powder too (Ros Dee Brand)
and a few drop of "Dark" Soy Sauce for coloring.
    Love,

    • @hungrytoexplore

  • @SuperXmarvinX
    @SuperXmarvinX Рік тому +4

To be fair, as a Thai, I quite enjoy Mark Weins' pad krapao not because it's authentic pad krapao, but because it feels like a hybrid between Pad Krapao and Pad Keemao with good aroma and nice wok technique. To make a point here, a true pad krapao, although still has a very heated debate regarding the addition of chopped long beans to the dish, is clear on one thing - fish sauce, sugar and msg ONLY for condiments. Oyster sauce, soy sauce and thick syrupy black soy sauce are from Chinese cuisine, and in this day and age, every krapao place seems to use this as the standard. I think adding those is an overkill. Regardless, I love the wok technique in this vid as the chef seems to know his way around his woks and flame. The problem with a lot of krapao places is that because it's so simple, a lot of places just chuck a lot of condiments in, no flame and wok techniques at all, half heart tosses, not heating the garlic or chilli enough to release their aromas, and just serve us with sweet and salty krapao with very shallow aroma. When I cook at home, I always heat the garlic and chilli first even before the protein of choice as the capsaicin (responsible for the burning sensation), the chilli aroma, and the allicin (garlic aroma) are quite soluble in oil so I can coat my protein with the aroma. I would sometimes go even as far as using dried chilli with chilli oil alongside fresh chilli and soybean oil.

100% I like the krapao at Mark's restaurant too. It is right up there with the best. But, I feel that it is a different experience to a local krapao. If I am telling people to only go for one, I would say to the one above because it is local, authentic and very tasty. If you can go to both, you should.

Mark weins "may: be authentic but it's pad khaprow. It's like full food chain, no one at the top, everyone had their own unique set of its personality. One may emerge as perfection but there will always be some place that is just more perfect.
