    Hi Sam!! I made two of them for Christmas and the meat eaters loved it.
    I personally enjoy it from beginning to end. Thank you for this recipe.
    I forgot to mention that I have been vegan for mont and half, so I enjoyed the dish so much.

    That looks absolutely delicious Sam. I'm going to make it for Thanksgiving here in the states. My daughter and I are vegan and the rest of the family are meat eaters. This dish will be perfect for the two of us and we both love butternut squash!

    The bottom of that skillet can be cleaned easily with sprayed with white vinegar and sprinkle baking soda and with a good scrubbing that skillet comes out shiny new. Even the stainless steel inside as well

    My local farmer has butternut squash for sale for $1!! I've been making vegan creamy squash soup, squash and black bean tacos, roasted squash....sooo yummy!!!! Will for sure try this recipe 👍🏻👏🏻

    Made this for an early Thanksgiving dinner and it was delicious! My husband wanted to be sure we could make this again and not have to wait for a holiday. LOL Thanks for a wonderful recipe. Used a couple more from your cookbook and they were great as always!

    That looks so delicious! Don't throw away those seeds! Boil them for 10 minutes or so then season them and roast them up just like pumpkin seeds there even better I swear!

    Just a word of caution when making this recipe: do not, under any circumstances, buy a very LARGE butternut squash! I did, and after 3 hours of cooking in the oven, much more time than suggested by Sam, the squash was still tough as a bull's foot! I recommend using smaller squashes when cooking for a large group of vegans. The wild rice stuffing was delish! Every other Thanksgiving recipe of Sam's I made was so delicious, we didn't mind not eating the butternut squash!

      Oh no! I would say better to make two squashes then one huge squash if feeding a large crowd. Smaller squashes tend to be more flavourful as well :)

    Will you be doing any stuffing recipes? Odd but i dont like stuffing except those trader joes vegan stuffed holiday roasts, I always think the stuffing is delicious ! But boxed or regular stuffing was always gross to me. But id trust your recipe :)

      Yep! It gets nice and tender. If you don't want to tho, it will easily peel off from the individual slices. Enjoy!
