All the best vegan cheeses (in my opinion) use tapioca starch, nooch, or miso paste (and lemon juice for the tang is also pretty much necessary). The genius here is using ALL THREE. This is truly, the ultimate vegan cheese recipe.

This turned into a rubbery concoction within 3 mins, 🤢! Thinned it out later to a sauce much more palatable. If I make again I'll use just one tablespoon of tapioca and maybe more liquid.
Quick question if the tapioca flour is old will it still work? When I followed the recipe the flour thickened the cheese but it never got gooey. Just wondering if maybe I did something wrong or if I need fresher ingredients. Thanks.

Is there a suitable replacement for the cashews (I am definitely going to try your sunflower seed mozzarella recipe)? This surprised me! I’ve probably made 1/2 dozen different cashew nacho cheese recipes that I didn’t care much for. My wife’s opinion is even stronger on the matter (hates them!) This one is a winner! Extra credit points if you have the 505 Brand green chilies in the jar from Costco. Add them right at the end after it finishes. So good!!

Ok, I am not vegan but I am super interested in vegan cooking (its like magic) so I try out a few recipes here and there. I tried a recipe for nacho cheese from another You Tubber that was supposed to be the end all. But it was so crazy horrible that i was like yeah never freaking again . However I took a gamble and made your cheese sauce. So glad i did! This stuff is freaking amazing, better than any vegan or non vegan cheese sauce i have ever tasted. Thank you Sam! This recipe is fantastic thank you for sharing your knowhow! Little tips like boiling the cashews for 10 minutes make switching to veganism that much more convenient and appealing, because as you said in the video it is easy, cheaper than store-bought equivalents, and the ingredients are long-lasting. Can't wait to try it!
GurrrL.... throw those chips in the oven on 300 for 5 mins ISH TILL SUPER FRESH N CRISPY.. or low n slow. They do tend to burn easy so keep an eye on em. Lol. BEFORE/ before you put that cheese n stuff on top if tou really want to blow your mind. Trust me 🤗💝👍. Greay show. Love me some Nacho Cheese Bega Style of coarse.

I always forget to soak the cashews or other nuts or seeds too, but boiling them always does the trick :)) ! I always say that boiling nuts saves the day too! And yes, tapioca is essential to have a stretchy gooey cheese sauce!

I never boil or soak any nuts. They all blend up into a sauce either way.
Indeed, they blend into the sauce, but if you don't have a very powerful blender you'll find your sauce gritty, not smooth.
