- Hello There Friends, In preparation for the holidays I thought I would bring you at least one recipe that could join you at your Christmas feast! Eggnog Crème Brûlée, DELICIOUS! Many of you may think that this is a Crème Brûlée is difficult to make, although it is not at all, come learn some cool tricks with me to make the perfect Crème Brûlée!

I tried chef's jean pierre's eggnog creme brulee recipe and it sparked a philisophical debate on if there is a point in which a creme brulee can be TOO creamy. It was set, no doubt about it.. but it's creaminess was so consumate, it was hard to believe it was holding together and not running out. there was no air in it, it's soft velvet texture came purely down to the recipe. I used heavy 38% cream 2:1 with whole milk so I could extend a quart of cream to 12 servings instead of 8. It held perfectly, but at the brink. it was creamy beyond any creme brulee I ever had, not even close. I sweetened with white chocolate, as chef suggested (sublime suggestion, will never make it with plain sugar ever again). Was it TOO creamy? I don't know. it was unlike what I was expecting, I've never had a creme brulee like that and so I can't say if it's better or worse, but I love it.

Sounds like the mixture of the 38%cream and the whole milk made a custard that was half way between a creme brule and a creme caramel. Great idea.
@@RCSTILE i think so. It's softness contributed to a texture that was velvet as cream but with none of the stickiness of heavy milk solids. No roof of the mouth action at all.
I suppose some might like that but i think it detracts from creaminess

I have only recently discovered this channel but have now watched 100+ of these videos :) I also realized that, many years ago I worked in a "fancy" restaurant, and the head chef MUST have been a student of yours: all of the menu items were EXACTLY your version of classic dishes... We have had this and other Crème Brûlée at Chef Jean-Pierre cooking classes and there is nothing like it smooth as silk and sweet without being too sweet.

I used to have a show on PBS called "Sunshine Cuisine" That was many years ago (When you needed to be a Chef to cook on TV 😂). Between the TV executives and the sponsors, it was not much fun to do it! On UA-cam I cook what my audience wants and I get a direct feedback from your guys within hours after I post my vids.
