The only time i measure anything is when im baking. Everything else is just "a pinch of this, a dusting of that, or a handful of the other thing. Thank you, chef, for explaining to people that cooking is about passion and not limited to a simple measuring cup. The most important lesson I have learned from Chef is the timing. Today in a single fry pan, I was able to cook a chicken breast to perfection, two over-easy eggs, and a handful of cherry tomatoes grilled. I accompanied that with some boiled corn on the cob. Absolute perfection.
I love how you explain the 'why' of doing something, like sweating mushrooms or shallots- it makes so much more sense than just barking orders at students like some teachers do. Then we can take the knowledge to other dishes. Also the same when you suggest alternative ingredients- 'if you don't have this, or you don't like that, try any creamy cheese'. I used to make great onion soup, but watched your video about combining in shallots and leeks and different kind of onions- that takes it to a whole new level of fabulous!!

Chef Chef Chef... I just learned a new term in cooking from my daughter ( that I am teaching to cook with your help ) she told me as I was cooking for her recently when I was on vacation. I was adding a spice and I told her just add what you feel is right and she said " so measure with your heart ". I said wow I love that! I probably have watched 100's if not into the thousands of cooking videos and I have never heard that term before. Just thought I would share with you.

The original recipe for Chicken Bryan has a lemon butter sauce that is magnificently delicious. So sad that it's missing from this version.
