I agree. I am from Louisiana and loved Justin Wilson. I believe he smiles down on Chef Jean. He would say "I guaronteee" he can cook as good as me. I am getting ready to experiment and use eggnog as my custard for my bread pudding. It works beautifully with French Toast. All you do is dip your bread in the eggnog and cook as normal. So very delicious. I may have to use a few regular pudding ingredients but it might be OK without. We shall see.

The tip about the eggs to volume ratio was perfect, just what I needed to know. I'm making this dish tonight without the crumble top or the dried fruit. I'm only using, using pink lady apples and whiskey soaked golden raisins. (I like the sweeter apple.) I'm adding juice of a lemon to add extra acid. Using nothing but vanilla and some whiskey soaked raisins to flavor the bread pudding, but using allspice, cinnamon and a touch of clove with the apples, so that will add some nice layering of warm flavors. Going to make a bourbon sauce for the top. Love you dearly, my friend. So happy to see someone enjoying so much what they do.

Hmmmm..... my Oma used to make something similar, but not so many ingredients. I haven't had it in years. It was called a "Kirschenjockel". A traditional breakfast in Germany consists of Brotchen (bread rolls). When you have too many, they get hard. Perfect for making bread pudding! Kirschen are cherries --- most pantries will have a jar of them and it's easy to dump them in. I miss her.
I'm so invigorated and exhausted at the same time.. this year we are doing g, I did.. the stuffin muffins, the butternut soup, the suflé, green beans with almonds. One of the funniest chefs 😄 on line. It tastes amazing, of course (it has a ton of sugar in total 😅), but I guess some would prefer a lighter version and I guess the chef would approve it: I'd put the nuts with the rest of ingredients (doesn't need crumble on top, releasing that amount of sugar), and I'd skip the caramel sauce (another bunch of sugar out). Though, it should be in the fridge for 24h before baking it. Then you serve it with ice cream or chantilly on top, or with your pastry cream (making it a little runnier like a custard). A green touch with some leaves of mint for decoration and voilà!. Less sugar and still delicious, specially with the custard 😋.

When I was a teen, Bread pudding was a monthly treat in our house. Never got tired of it. My mother would use dry bread that collected over the past weeks. A bit of rum in there would be nice.

When I was a teen, Bread pudding was a monthly treat in our house. Never got tired of it. My mother would use dry bread that collected over the past weeks. A bit of rum in there would be nice.

I am a bread pudding freak, and I have made more apple crisp than I can even remember. My son used to request them for his birthday "cake" when he was little.
