  • If you're gluten free and you happen to love mushrooms and noodles, this recipe is for YOU. I am a huge fan of hand-ripped Western Chinese biang biang style noodles so I knew i had to try these noods out. They're vegan, they're fairly easy, and you won't be feeling as heavy as you might normally with a heaping bowl of noodles.

      Agreed, it absolutely infuriates me to no end when I hear those stupid comments. It's literally in nearly EVERY food and protein naturally. And to people saying it's a known allergen are so misinformed. You'd literally be unable to eat anything if you had an allergy to msg. It naturally occurs in absolutely all food groups and we eat it every single day.
      It's the same as any ingredient or seasoning. Moderation. Like don't go adding tablespoons of it to your food. That's probably really bad for you, just like how the amount of sugar you're likely already eating is bad for you.

      @@djuanadaysable ok that is absolutely false. Idk where you got that data or information from but that is genuine fear mongering. Being someone that graduated from culinary school with food safety and sanitation being part of my degree, and also currently in the process of getting a degree in nutritional food science - I can irrefutably assure you MSG isn't toxic.
      MSG was originally discovered from kombu seaweed extraction. This method is no longer used in production, and is today now starch and sugar ferment based. You weren't wrong about that, but the toxicity you speak of is non existent.
      Fermentation of sugars and starches do not produce toxic compounds in a commercially scaled controlled environment, and honestly rarely even in home kitchen environments unless you're just being unsanitary.
      Glutamates are literally present in all foods, and MSG is just the salt form of glutamic acid. To even activate the glutamate response, salt has to be present which is what makes food taste good. You're so unfoundedly against MSG while I can guarantee you, the vast majority of your favorit foods taste good because of the glutamates present in it.
      Manufactured MSG already has mono sodium structure and is just skipping the additional sodium step we'd do in cooking by asking salt. Stop fear mongering and grow up. And also, the fear of MSG is rooted in Asian racism and discrimination - and actually has absolutely no connection to nutrition studies.

      Do more research and let us, the people who went to school for and are in the relevant industry to educate others. Like truly it's baffling where people get a mindset like yours. Vegetables have sugar, they have starches, they aren't toxic. Like do you think bread is toxic. It's essentially extracted wheat starch. Do you exclude any and all forms of potatoes and rice from your diet? Like wtf so fucking stupid

    Merle, my girl, I implore you to shop at local Asian markets. That's where I get all my mushrooms and most of my fruits and veggies. It's so much more affordable and I prefer supporting local families over corporate health food stores.❤

    Also, the cost of those mushrooms were more for the fancy box than the mushrooms themselves. Unnecessary packaging always jacks up the price of produce.

    6:22 Instead of blanching the shroom noods, you can try soaking them in salted room temp water and it might get a more firm texture to it, kind of like canned mushrooms have.

    1:58 WOW!! That's crazy! Go to a local Asian market in Chinatown or something. My local place has king oyster mushrooms for $2.99/lb... and this is in NY. Food id &*^%ing expensive here.

    Dr. Peter Rogers has also done a couple of videos on MSG and other food toxins, he's a Stanford educated cum laude student back in the day (brain radiologist by trade now). I'd advise watching his videos on the subject.

    The only issue with MSG is if you're allergic to it. Otherwise, it's fine. Heck, I knew someone who *was* allergic (RIP), and took a benadryl, so she could eat mushrooms anyway🤣

    Mushroom grow kits are the easiest way for sure, but I’ve also managed to grow an oyster mushroom by boiling cardboard and mixing it with puréed mushrooms, put in a plastic to go tub with some holes poked in it. It only managed to grow the one shroom but it’s possible!

    this is just boiled mushroom slices with sauce. i believe the sauce wont penetrate if eaten immediately.
    instead, pan it fry until you heard squeak from the shrooms (sort of GBD/malliard reaction wtv), then toss in the sauce and finish on the pan to let it absorb the flavorrrrr

    My Zion market was having a sale on 5lb (huuge) king oyster mushrooms for $8!!!! ⅓ was 'scalloped' ⅓ was minced, and ⅓ was peeled. I'm definitely trying this!

    Pretty sure you could just use some big boi King Oysters and you'd be fine. They're cheap af at my local Asian grocery. Just that sauce alone sounds bomb to me - I love green onions and sechuan also

    Next Time I get the big King Oisters, I'll try this!
    Usually they are medium size here.. And I think 3 medium size Shrooms are about 4 Euro.
    I also did grow some Mushrooms (Oyster Mushrooms), but then I had a Problem with those small Flys, so I have to start over, because they are a real Pain!

    They normally are sold by weight. Hence why you don't get a lot, but you can see these make a lot. Growing King Trumpets can be done, just note they can be picky about temperature. I grow them and also Black Pearl Kings among many others. Local mushroom growers around you light sell you colonized bags, check your local farmers market. Great video and recipe! I will have to try it. You can do so much with mushrooms as well. Example: Lion's Mane "crab cakes", "scallops" using KT, pulled "chicken or pork" using KT, deep fried Oyster mushrooms that taste like deep fried chicken. Just to name a few. 😂😂

    Those mushrooms are easy to grow and I'll soon be selling the liquid culture to do so with. But yeah there are plenty of fruiting blocks and or kits available throughout the webs

    King oyster is around 2 to 3 USD depends on its distributors but my country's dollar exchange is high so it's also quite expensive to me, compared to other proteins (I live in SEAsia but king oyster is imported from East Asia like Korea or China, so...). Anyway this dish looks delicious, I will be trying this recipe surely when I have this mushrooms at hand! ❤

    I'm not sure about trumpet mushrooms, but my parents have been growing their button mushrooms at home for years. It shouldn't be too hard to find mushroom growing kits, and they are very cost-effective and low maintenance. It also doesn't take a lot of space, so it could be perfect for your space !
    Do your research Merle but if I'm not mistaken, North Spore is also a company that does this in the US. I follow them on here, I find their content super interesting 😁

    I grew shitake mushrooms for a while on a small log I got at farmers market. Needed more water than I gave it, but the mushrooms were delicious!

    I just used the rest of my king oyster mushrooms, but I'll have to remember this for next time. I would highly recommend an Asian market?? Unless mushrooms just cost crazy much more in your area??

    I agree that the stuff about MSG is racist marketing. My family used it in cooking (in moderation) most of my life. I don't, but there is so much of that stuff already added to foods that there is no real need. Incidentally, MSG was pushed on Western markets for years when I was growing up, as I saw commercials about it on TV all the time. Look up Accent food additive. It's MSG, but they won't call it that. It was introduced and marketed to Western consumers in the late 40s or early 50s. It's more expensive than what we can get in Asian markets, of course, so the company made a lot of money. It's kind of the same issue with the dairy industry (loved your vid on that).
    Anyways, I remember when you were doing the king mushroom scallop thing, and was fleetingly thinking how great it would be to make noodles out of the the mushrooms. I have cut the stems into strips to add to my actual noodle dishes (along with carrots , zucchini and onion), but this is even better. Actually, it would be great to mix this and wide zucchini strips together to make this dish, too. I've had to cut a lot of carbs out of my diet in the last few years, so these recipes are awesome. Def hit up Asian markets for those shrooms, though. Nearly had a heart attack when I heard the price. Love your videos...thanks for the awesome content.

    See msg only bothers me with my acid reflux for some reason. Anytime I use it or eat it, it’s triggers it. But that also just could be how my acid reflux reacts. The. Again I’m suppose to eat bland foods so that’s why lol I hate bland food

    I often wonder if, since mushrooms are more closely related to animals than plants, they will change from being considered vegan in the future at any point lol. I don't think they should, but I wonder.

    Hate to tell you this, but I get King mushrooms for $3 bucks & I get 3-4 shrooms per pack! Sometimes living in a place where trends go to die has its benefits. I, sadly, have to avoid msg, but only because I can't handle high sodium foods. BUT, I've found my body has more trouble with highly processed American food than it does with Chinese or Japanese. Thank God, cause I love Asian food.

    The nonsense about MSG just shows how well propaganda works on the simple minded.
    I use MSG all the time as a salt substitute.
    I grow my own mushrooms and will be growing some King Oyster soon as they need it cooler than most so winter is good time to grow them.
    Once you have the first batch of spores you can make your own mushroom bags for about $3 a bag and get usually 1 1/2 to 2 pounds of fresh mushrooms per bag so about $1.50ish per pound and they are organic and just picked freshness

    I literally was just talking about this with my mother the other day I had a friend she said that her and her mother were allergic to MSG I was like OK well do you like Doritos? She said yeah I love Doritos I said OK I said do you like Ramen noodles and she said oh girl I love Ramen , and then I didn’t say anything after that cause msg is in all that stuff.

    Yeah that brand of mushrooms is chronically overpriced. You can usually find sets of the larger trumpet mushrooms in Asian markets for less or similarly priced but for considerably more.
    Oh!! And if you like sichuan peppercorns I recommend making Bang Bang "Chicken" with king oyster mushrooms as well. You shred them with a fork into long shreds then I tend to toss them with vegan chicken powder and a touch of sesame oil and gently cook them until they're tender, but not brown. Then you assemble a sauce of: soy sauce, black vinegar, chili oil, sesame oil, ground sichuan pepper, sugar, salt, and sesame seeds.
    Julienne some asian cucumbers, put the mushrooms on that, then dress with the sauce. It's great with a garnish of green onion and cilantro. This is the traditional dish, not like the fried stuff people think of. It's "bang bang" because of how the original protein was prepared.

    1:39 Free glutamates aren't an evil ingredient, but isolated monosodium glutamate may very well be because of how they isolate that MSG. Glutamates are naturally occurring in all fermented and digested food, so glutamates are created in the digestive track, but that's still a natural mixture of free glutamates, not purely MSG or the chemicals corporations use to isolate MSG from the other glutamates.

    Merle. Noodles are not 'unhealthy'. Calling mushrooms 'healthier' than noodles is straight up diet culture. I've seen a few bits of diet culture sneaking on to these videos and it's incredibly off putting. I like your videos. Don't do this.

    Love you, Merle, but I've gotten headaches from MSG. Since there is so much disagreement about MSG's safety, why not just be on the safe just in case? There are so many alternatives and I'd rather not risk the health of myself or my family.

    It may not "being a thing", but it causes HORRIBLE migraines for me, which was confirmed by doctors a long time ago. If it can do that, there's something just not right about it.
