The interesting thing is that I went into frame advance and just about everything except the Vice Shadow H unblockables could be reasonably fuzzy blocked. The 2D into Shadow D and 5K unblockables usually had like an 8 frame gap between the low and overhead. And the Far drill FRCs into IAD J.S had a 4-5 frame gap. At top level, I guess every one just learns the fuzzy timing and it becomes a pressure situation for Eddie rather than guaranteed damage. Plus the slight timing changes you have to make based on wake-up timings makes it even harder to time for the Eddie player
my timings are definitely not up to snuff, but it's not all that hard to time the hits much closer together (even if they would both hit the same frame, the game makes them hit 1 frame after another so there's always the potential to block). In the case of the Shadow D unblockables, the eddie also had the capacity to choose which of the two hits connects first, so there's a pseudo 50/50 going on as well if the opponent is going to try to block. Not impossible, I've had people block some of these on me already, but it's still a useful tool at all levels imo. More pressing is the ability for a lot of characters to just escape altogether, so it's not the end-all regardless.
(To answer the question, it's because unblockables aren't a very sustainable strategy, and some characters can reduce the damage/avoid the UB entirely.)
