Pineapple Mini Pies Recipe
Crust Ingredients
• 2 1/2 cups of all purpose flour
• 180 grams of butter
• 1/3 cup of sugar
• Pinch of salt
• 3 large eggs
• 3 tablespoons cold milk
Filling Ingredients
• 3 1/2 cups of crushed pineapples
• 5 tablespoons of custard powder
• 1 cup of milk
• 1/2 - 1 cup of sugar
• 1 cinnamon stick
Method
1. Mix chopped butter and flour until it becomes like cornmeal
2. Add egg one at a time and mix well
3. Knead the dough lightly
4. Add 1 tablespoon of cold milk if needed
5. Once dough is set, cover and leave it in the fridge for 1/2 hour
6. Add pineapples in a pot on the stove
7. Add sugar and cinnamon stick
8. Mix custard with milk then add to the mix and cook on medium until the sauce thickens.
9. Turn it off and cool it down.
10. Assemble the pies and bake at 180° Celsius for 15 minutes blind bake then take out the sack of rice and bake for few more minutes.
11. Cool the pastry then add custard and leave it in the fridge to set
12. Add cream and topping of your choice

Are you able to use the normal cupcake/muffin tins?
You can use the normal muffin tray to bake them I only use these because my oven wasn’t working. Thanks 🙏

Hello Uso Rob, I used the rice to blind bake the pie pastry first before adding the pineapple filling when the pie pastry was completely cooled. The weight of the rice in the foil will stop the pastry from puffing up. I hope that's clear explanation. Thanks for the support 🙏🏻
