I just made & it came out perfect...small tip add a little (1/2 Teaspoon) of Salt to bring out the flavor...no need for a beater 3 mins after taking it off the heat use a wooden spoon & mix thoroughly until it starts to get grainy...good recipe & good luck ppl
Made this a few times now. What she forgets to include is that you should boil the mixture at a medium-high temperature for around 1-2 mins only and then immediately bring the temp down to medium-low, and then cook for a further 20 minutes, gradually reducing the heat down to low. If you leave the temperature on high for 20 mins then you're just going to burn the whole thing.
I make this fudge several times a year for birthdays and at Christmas. My first few tries were not the best but I got myself a good heavy based pan and a thermometer and now it works every time. It does take about 20 minutes to get to temp, if you go too fast to get to 116C there will be too much moisture left in the mixture and it will set soft, if you boil it to temp too slowly there will not be enough moisture left at it will set hard and crumbly or go grainy. Once everything has melted and dissolved and it then starts to boil then start your 20 minutes boiling time stirring carefully all the time. I find it takes any where from 20-30 minutes. Then I put the pan on my granite chopping board to cool for 5 minutes before beating with the mixer. The mixer time can take around 5-8 minutes depending on your mixer speed. Works for me now every time. Good luck.

i made this tesco fudge followed the vid. result a sticky cream that did not set when cooled . 150.grams butter 1 tin 410 grams evap milk . 500 grms of caster sugar had it low till butter and milk and sugar was well melted. did the water test made a ball left it for 5 mins after boiling point i never had an electric whisk so used a hand whisk and elbow grease stuck it in my buttered tin. result was a cream that tastes like tablet but looks like cream. total fail. but will try again and buy an electric hand whisk. trying to make it for my grand kids. i made tablet wjth 1 bag caster sugar and it worked a treat but not a tesco recipe
Best to just buy a sugar thermometer and take the guess work out of it. They're like £5 from Amazon and come in useful for anything from making perfect home make chips, to making cinder toffee, fudge , boiled sweets and all sorts.

In the last few weeks I've watched 50 plus videos on baking & making food from chicken dishes to buns to croissants but when I watched this video on fudge I immediately wanted to make them so after watching it another 3 times I felt I was ready to make them. I made them before work and left them to cool, that work shift was the longest ever and as soon as I got home I had the most delicious fudge I've ever tasted. So if you go to make these start your heat hotter at the start and after 10 minutes turn down to medium high, my back got sore after 25 minutes stirring and at 35 they were done. Trying to get the fudge in the water to form a ball meant stirring slowed so some flaky bits appeared but I carried on and when I used the hand whisk these disappeared. Be careful putting it into the tray as the fudge is still really hot, and don't worry about cleaning the pots they magically become clean!
I make this fudge and I have been for about two or three years. There’s something different I always do though. Here’s some tips. Cool your fudge till it stops bubbling before mixing If it seems like it won’t come together and is still thick, put some icing sugar in then heat the mixture up until it starts to bubble a little. After that, take it off the heat and beat it instantly, then after 1 minute of beating pour some icing sugar in. Pour more and more till you get that gritty part in the video. (Don’t pour too much at a time as it could make the fudge too grainy even if you don’t notice it) Those are my tips. Hope it helps c;

Works for me👍 after about 8-10 you start to notice it thickens a bit and I just keep adjusting the heat while stirring, as it first boils reduce heat to simmer for a couple mins otherwise it will boil over then just keep it at a medium heat for the remaining time and keep stirring slowly the whole time

I followed this recipe word for word-and it turned out beautifully! Near the end of the boiling stage, despite stirring like a maniac dark flakes appeared (burning) - but like magic by the end of the boil they had completely disappeared. The texture, flavour and colour was better than that which is bought in a sweet shop!
Add the vanilla extract to your mix on the boil, reduction will intensify the favour, also a handful of whit chocolate at the end will help if solidify and adds a creamy flavour to it, you’ll have to reduce the butter by 1/4 if adding white chocolate, the choc goes in when mix is cooked down too

Now i know where I'm going wrong! I used to collect Disney cakes and sweets and followed their recipe which is exactly the same as his (apart from the vanilla theirs is 1tsp) and it would always stay runny and never thicken! I'm going to leave it boil until it thickens now :)

I followed everything to the letter. Here's what I did, and perhaps someone can help say what went wrong (apart from deciding to try this 'recipe' in the first place! lol!) 1 tin of TESCO 410g Evaporated Milk 500g TESCO Caster Sugar 150g of _Graham's_ Unsalted Butter ---------------------------- 1) Cubed the butter, and emptied the evaporated milk into the pan then tipped in the Caster sugar. 2) Brought up to a medium heat and got everything nice and melted. 3) Brought to the boil, and stirred CONSTANTLY for approx *15 mins* (wrist aching at this point and mixture getting hard to stir). _....the colour was almost a dark brown at this stage._ 4) not even 30 seconds later, in the pan it was VERY difficult to stir 5) Dropped a bit of the mix into a glass of cold water - and IT WENT SOLID ON CONTACT - actually like a hard toffee. _I did not include any Vanilla extract/essence_ 6) Brought out the food mixer, and with the beaters mixed it for not even 15 seconds. _....It went _*_solid_*_ on the beaters._ 7) Trying to remove the ''fudge mix'' from the pan was almost impossible as it was very dry and crumbly. It has now set, but it's _solid._ - as in inedible. So...erm...what gives? I have a ceramic hob electric cooker, I CAN cook (though I am no Ramsay or Oliver, but I've nnot starved yet), and know what a medium heat is on my appliance, and what a rolling boil is. I used a thick based stainless steel pan, and a wooden spoon through-out. I will not be trying this again, as the clean up on the pan is going to be a nightmare. (It's NOT burnt or stuck to the bottom). Just all dry and solidified brown crystals. :(

Condensed milk and evaporated milk are not the same. If you use condensed milk you’ll need to add a little bit of whole milk too. Evaporated milk is a lot cheaper than condensed milk and seems to be more widely available.
Just done some fudge ended up with black burnt bits in it :( also like a few other said it didn't set for ages and still don't think it was perfect but we shall see it's now in my tin cooling , does look lovely just hope it doesn't taste burnt :) evaporated milk in tescos guys 55p x

@@WhosAGoodDogue, did you let it cool before mixing? You need to let it cool to quite bit. To 45 degree celcius or 110 fahrenheit.

You cooked for too long, your mixture went to the hard ball stage.
i havent got evaporated milk but i have got condensed milk will it work the same?

No, fudge needs sugar. If you use condensed milk just thin it down with some normal whole milk.

This is better with evaporated milk. If you want to do a condensed milk one search for look on the Carnation channel as they do one.

Condensed milk and evaporated milk are not the same. If you use condensed milk you’ll need to add a little bit of whole milk too. Evaporated milk is a lot cheaper than condensed milk and seems to be more widely available.
Just done some fudge ended up with black burnt bits in it :( also like a few other said it didn't set for ages and still don't think it was perfect but we shall see it's now in my tin cooling , does look lovely just hope it doesn't taste burnt :) evaporated milk in tescos guys 55p x

In regards to the burnt bits, you may need to try having it on a lower heat for longer and constantly stirring the mixture. We hope it turns out okay!

The butter can come from the fridge - it will only delay the cooking method slightly.
