The chicken appeared to be a "leg quarter". That is usually the cheapest cut you can find in a grocery store. Both the thigh and drumstick are cut off at one time and sometimes the meat cutter will cut in the side of the ribs when trying to cut that whole side off. When I was younger, they'd often be on sale for 59¢/lb. Nowadays I see them for around $1.29/lb when on sale. My husband likes dark meat so I still buy them when I want to BBQ chicken.

With regard to the fried chicken dissection: It appears to be a whole breast, which is why it's so "monstrously thick." For whatever reason, this particular piece was not split into halves, which is how it's typically prepped and served. I could be wrong and would be interested in hearing others' opinions.
I say you're spot on.........I saw it as primarily a breast when seeing the split gap on the side. The second piece he got was cut in the conventional way you normally see them fried.

They are either not properly mixing it or trying to make crepes from thinned out pancake batter or lastly, and not likely as they are obviously trying to stretch pancake batter into crepes, they are not letting their crepe batter sit over night so the bubbles can come out. "Come to the Excalibur Buffett for the world's shittiest crepes! We start with low-end grocery store instant pancake mix, just add water. We then double the water and stir the hell out using our Vitamix. Then we tell you it is a crepe and fill it with the finest canned pie filling that Sysco has on offer and finish it with some Food Services of America whipped cream."
