Thank you for this recipe. I was able to use it to make feta. I just used the soaked chickpeas and water. I then followed the rest of the recipe and made the cheese. After it is set, cut it into cubes and place it in olive brine with a little sea salt. Best vegan feta ever. For those that do not want to use tofu, this is an awesome substitute. Thanks again.
Cost over $20, just for the raw cashews, to make a small amount of veg cheese. This looks even better and probably 1/4 of the cost. The color is lovely also instead of drab gray! Thank you.
Where do you live? :O I just made 1.5kgs of a cultured, cashew, soy mozzarella in Australia and it only cost like $12USD. Freezes well too! I didn’t even do this but you can save more money buying cashew pieces instead of whole nuts. It’s a lovely white milky colour!

Just ordered black (beluga/caviar)lentils, for the 1st time & can't wait to try them. Living in a very remote area. Most locals shop at walmart...We do have Tops grocery-store BUT it's tip-top-dollar. Grow a lot of veggies/herbs & wildcraft some food/medicinal's but must order much of our stuff as it's a very short growing season. Australia sounds amazing and WARM! I like that you didn't strain it and left the essential fiber in for all it's important health benefits! As a whole food, plant based eater, whenever I get the inevitable stupid question from the "meatheads".... "but where do you get your protein? ", I just toss it back at them..."I get plenty but where do you get your fiber and antioxidants???" lol
I definitely love eating plant based foods. People do it for all kinds of reasons. There's nothing wrong with eating meat, too. Apparently, you don't believe in God. He gave man dominion over the animals and approved us to eat in a proper way...Jesus fed a multitude of people with two fish and two loaves of bread. You should not worship the creation over the Creator.
I made this earlier this afternoon, although it's delicious, it doesn't taste anything like vegan cheese, however, I sliced it up, put in-between greaseproof paper and popped it into the freezer, I fried up a few slices and used it as a sliced meat substitute and wow, very yummy, it can be used in sandwiches like this and a few slices with any meal. Thank you. I did expect it to taste like the vegan cheese I'm used to, but it didn't. Still healthy and tastes very good.

Not sure what "doesn't taste anything like vegan cheese" means. Most of the vegan cheeses I've tried don't taste like one another either. It's just an alternate flavor. As long as it tastes good, that's all that matters.

I've been looking for a good substitute for paneer in curries. Tofu is kind of ok but it still always tastes like tofu, I'll give this a try and see if it holds up in texture and taste. Think I'll cube and brown it a bit first than add it to the gravy. Thanks for recipe. 😁👍🙏

It a kind of tofu - vegan cheese taste. The best way to eat it is cutting it in cubes and frying it! Add in your salads, sandwiches... :D
