Here's my favorite (unfermented) cashew "ricotta cheese" recipe: 1 ½ cups raw cashews, soaked in water overnight (or soaked in hot water for a half hour) ½ cup water, more if needed 1 Tbsp lemon juice 1 Tbsp nutritional yeast (optional - for flavor) 1 clove garlic, minced 1 tsp onion powder salt & pepper, to taste Blend it up and use it immediately. We use it for lots of recipes, but our favorite is in a mushroom & spinach lasagna - heaven.
Hot for Food you tuber Lauren Toyota has a ricotta made with tofu that I have used fir ricotta too. Easy and inexpensive. Vegan ricotta in the store is crazy expensive

Oh my gosh, subbing roasted red bell peppers is a great idea. I stopped buying pimentos too because I don’t use them enough to keep them but I always have roasted red bell pepper on hand

Awesome variety in this series and this input is a gem. A tip i saw in another cheese making video is to put yr cheese in the bag turned inside out so that less gets stuck in the fabric of the seem. Basically have the seems be outside the bag. Tfs

Today I was thinking about this video, and how I need to try this! But I wanted to share a recipe I tried last weekend that my family flipped over. My teenage boys ate it up. We are not vegan but I love to mix it up lol. Its incredible!!!!!! Please try it! Add cowboy candy if you want!! Cashew Queso Sauce 9.5 oz bag of raw cashews -use all of them 1 & 1/4 cup warm water 1/3 cup Nutrional Yeast 1.5 tsp onion powder 1.5 tsp garlic powder 1 tsp pepper 1 tsp salt 1 tsp turmeric 3 tablespoons Salsa of your choice 1 tsp dried or fresh garlic Sprikle of dried red bell peppers or 1/4 fresh red bell pepper diced. Blend in blender until smooth, add a bit more warm water if too thick until its a consistency you like!! *** If you dont have a powerful blender that heats up food as its blends like soup etc... like a Ninja or Vitamix, the soak the cashews in some water for a couple hours then drain and add to blender and follow recipe, once smooth you can heat up in a pan on the stove!

Depending on what you want to use it for you can also make that into sour cream, nacho cheese, really anything depending on herbs and spices or other ingredients. Time hack, boil the cashews for 10-20 minutes. Some people say 7 minutes but they aren't soft enough with only 7. If you want to keep them "raw" soak overnight. Cashews actually aren't raw, they're steamed or blanched. It's not legal to sell raw cashews. Thank you for posting this video. I've been vegan for over 9 years and also worked as a chef. I have made cashew cheese many times. My recipe has lemon juice and pimientos (gives a nice flavor and orange color). It is more liquidy so easier to blend. I have fermented pickles and cabbage but never tried fermenting cashew cheese so I will have to give it a try. Thanks for sharing Rachel!

Try Adding red pepper flakes, or dried greens, or dill, or crispy onion pieces…..so good..we love roasted jalapeños in ours.
