- In this episode we head offshore on the 28' Freeman to do some daytime swordfishing. After af ew hours of fishing both Chandler and Nick catch their first ever swordfish. Back at Bud n' Mary's Marina we clean the fish and a couple days later at home we cook them up! Charlie from @BonaFideWorldGuide makes a delicious cedar plank swordfish on the grill with a maple pecan bacon topper!

I put king mackerel on the cedar plank. After cooking it I throw the mackerel away and eat the plank.

Try smoking the King. Only way I have ever had it and it's good.

I used to live on Lobster Lane on canal 7 houses from ocean. Had 36concept twin merc 5s. But. I moved to Sandy Pond NY on Lake Ontario to be near my grandkids in 2019. I miss the fresh ocean seafood. Yeah. There's some great fishing on the lake but...man. swords. Yellowtail. Yellowing. Hogs. Wahoo. Oh man. My daughter in law did order me some fresh Mahi thru restaurant she works @ & I just smoked some to make my fish dip & hot sauce for holiday party. Nothing like catching them tho. Anyways. I use the Cedar plank for King Salmon!!! Season it to taste and bake on cedar for 20 mins at 400° pull it out, scrape the fish in the garbage and eat the cedar plank 😂😂

I’m still not chartering much due to my ongoing health issue. Hopefully one day i will offer charters on a regular basis again
Western red cedar planks, anything special? can I use one from the lumber yard?
These are cedar planks we got as a gift, I’m not positive the exact specifics of them. They do give it an awesome flavor
I recently saw fishmonger on UA-cam filet the same way w I th spine up.
He is great at filleting fish

Do swordfish live in the middle of the water column?
We catch most of ours near the bottom deep dropping but at night time a lot of them come toward the surface to feed

It is a hybrid so just part of the design. The bigger offshore models have the standard higher gunnels

I absolutely love fish, and I have my own boat with fish Lake Erie for wall eye all the time and perch. But I tried swordfish one time and it was nasty. I don’t know if it was big old one or what it was as far as age, but it was not good at all is really potent and strong fishy taste
Probably was just a bad piece of fish. Should be fishy, means it was old or not iced down well

He’s still in town, just lives a little further away so don’t get to film as much as we used to together
