    Ingredients:
    16 oz. Penne Pasta
    4 Tablespoons Butter, Separated
    1 Pound Shrimp, Peeled & Deveined
    3 Teaspoons Minced Garlic (About 3 Cloves)
    2 Tablespoons Freshly Chopped Parsley
    2 Tablespoons All Purpose Flour
    3/4 Cup Whole Milk
    1/4 Cup Low Sodium Chicken Broth
    1 Cup Shredded Mozzarella or Muenster Cheese
    1/4 Cup Parmesan Cheese
    1 Cup Chopped Tomatoes
    Garlic Salt
    Directions:
    1. In a large pot with salted boiling water, cook penne according to package instructions until al dente. Then drain.
    2. Then in the same pot or a large skillet, over medium heat, melt 2 tablespoons of butter. Add the shrimp, garlic, and parsley. Cook until shrimp is pink, about 2 minutes per side. Transfer cooked shrimp to a plate, but keep the juices in the pot.
    3. Add 2 tablespoons of butter and let melt. Stir in flour and cook 1 minute. Add milk and broth and bring to a simmer while stirring. Stir in both cheeses. Add tomatoes, shrimp, and pasta, and toss until combined. Season with garlic salt to taste. Add a splash of milk if the consistency of the sauce is too thick. Serve warm topped with Parmesan and garnished with parsley.
