- Today I'm sharing with you Rice Flour Chiffon Cake recipe. Many people have asked me for a gluten-free chiffon cake. So I made one today. And guess what? This cake is also suitable for those who are lactose-intolerant. You can replace whole milk with soya or almond milk.

Ingredients (6x3 inch loose bottom pan):
70g (1/2 cup) white rice flour
20ml (2 tbsp) vegetable oil
50ml (3 tbsp) full fat milk ( replace with soya or almond milk, if you are lactose intolerant)
1 tsp vanilla essence
3 egg yolks
3 egg whites (eggs with shell weight 52-60g each)
1/2 tsp vinegar or lemon juice
50g (4 tbsp) sugar
6 inch cake : Preheat the oven to 150C and bake for 40 mins or Steam on medium heat for 40 mins.
Ingredients (8x3 inch loose bottom pan):
140g (1 cup) white rice flour
40ml (4 tbsp) vegetable oil
100ml (6 tbsp) full fat milk ( replace with soya or almond milk, if you are lactose intolerant)
2 tsp vanilla essence
6 egg yolks
6 egg whites (eggs with shell weight 52-60g each)
1 tsp vinegar or lemon juice
100g (1/2 cup) sugar
8 inch cake : Preheat the oven to 150C and bake for 80 mins or Steam on medium heat for 60 mins.

Should be fine. I'm not sure if there is a difference to Thai rice flour.
Thanks for sharing. Looks so great texture. I have some questions Q1 - Does the cake smell like rice fragrance or smell better than better than using cake flour? Q2 - what is the texture like compared to use cake flour? Can you help to describe it. Thank you
The cake smells exactly like vanilla cake. As for the texture...it is comparatively less bouncier and softer when compared to chiffon cakes...I mean very little as it uses rice flour, still it is soft..hope this helps with your queries. 😊
