Pistachio Chiffon Cake | Pistachio Sponge Cake | Pista Cake | Bake and Toss

  • This pastel-green, easy-to-make Pistachio Chiffon Cake is super moist, fluffy and soft. All you need is pistachio spread and a few handful of ingredients and you are ready to make this beautiful cake. Frost it with simple whipped cream and crushed pistachio nuts and it taste absolutely delicious. So let's get started.

    Ingredients (6 x 3 inch loose base cake pan):
    50g pistachio spread (from store) or pistachio paste (homemade)
    50ml (1/8 cup + 4 tsp) full fat milk
    30ml (1/8 cup ) vegetable oil
    60g ( 1/2 cup) cake flour
    2.5g (1 tsp) corn starch
    1 drop green gel food colour (optional)
    3 egg yolks (eggs with shell weight 60-65g each)
    1 tsp vanilla extract or pistachio extract
    Meringue:
    3 egg whites (eggs with shell weight 60-65g each)
    1/2 tsp vinegar
    60g (1/4 cup + 1 tbsp) sugar
    6 inch cake : Preheat the oven to 150C and bake for 60 mins
    Ingredients (8x3 inch loose bottom pan):
    100g pistachio spread or pistachio paste
    100ml (1/3 cup + 4 tsp) full fat milk
    60g (1/4 cup ) vegetable oil
    120g (1 cup) cake flour
    5g (2 tsp) corn starch
    2 drop green gel food colour (optional)
    6 egg yolks (eggs with shell weight 60-65g each)
    2 tsp vanilla extract or pistachio extract
    6 egg whites (eggs with shell weight 60-65g each)
    1 tsp vinegar or lemon juice
    120g (1/2 cup +2 tbsp ) sugar
    8 inch cake : Preheat the oven to 150C and bake for 120 mins

      Hi Cassie! You can make the pistachio paste at home if you can't find the spread. You can find the recipe on UA-cam.

    This looks delicious and I really want to make it, but how long would you recommend I bake for two 6-inch round cakes together?

      If you plan to bake together two 6 inch cakes, you will need to double the baking time mentioned. Also check if the cake is completely baked or not using a toothpick test at the end of baking. If needed increase the baking timing 5 to 10 mins. 😊

    Can we use powdered pistachios instead of paste? How much please

      For this recipe I recommend only pistachio paste. If you like to use powdered pistachios, please follow my vanilla chiffon cake recipe and replace the vanilla exact with pistachio extract and add 30g finely powdered pistachio. Bake for 35 mins for a 6 inch cake.

    What's the cornstarch for?

      Corn starch prevents gluten formation and thereby making the cake light and airy.

      @@BakeandToss Wow. Thanks. I learned something new today. Isn't the cake flour have the lowest amount of gluten already? Are you aiming for zero content gluten?

      @@peek-ka-boom6017 yes cake flour has the least gluten formation but corn starch makes it even lesser like u said.

    Instead of food color, try some fresh spinach puree
