  • Coddle is a simple stew from Ireland - it's also known as Dublin Coddle. The main ingredients of this warming stew are potatoes, bacon, sausage and onion slow-cooked in a tasty stock. In this video I show you how to make coddle, and also how to make soda bread to go with it.
    Soda bread is another Irish classic recipe - unlike conventional breads, it doesn't use yeast, it uses bicarbonate of soda as a rising agent. It's very easy and quick to make, and very tasty.

    This was my dads' favorite. When mom wasn't home this is what our dad made - all the time. Not the fresh parsley but it's all there! He was feeding a lot of us. I'm sorry but I can't help but laugh at your asteroid! I've made Irish Soda Bread a plenty and I can't remember it being that way😅😅😅😅👍 Thank you for bringing this memory back!

    You're correct about amount of recipes for coddle , every household has their own unique recipe . From adding black & white pudding to carrots and stalks of vegetables. Coddle was a dish for for poor before it became trendy, when Ireland was in dire straights and the country, inc Dublin was in tatters (thanks to our neighbours). You were lucky if it contained meat at all... . Now you can even get a coddle breakfast. Good on ya mate , great vid

    This looks SO good!!! I will be cutting up a sausage & browning it some for mine also!! I’ve made Irish soda bread in the past, but the recipe I had found called for putting a cake pan or something like that, over it...I just cooked in a tin pie plate & took another, bent the edges down & put that on top. My son took some to work with him & a coworker said something, he tasted it & told my son it was the real thing, he was from Ireland. I’ll be making an Irish dinner for St Patrick’s day this year!!!

    i liked this recipe very much, this kind of stews are allways very gratefull for winter :p, remimds me somehow to patatas a la riojana, potatos and chorizo stew. Also love how you explained the reaction of bicarb with the buttermilk, already done a couple times soda bread and now wanna make it again :)

    First off, thanks for posting this. I wanted to make a traditional Irish dish for my wife, and the old standby, corned beef and cabbage, didn't sound great to either of us.
    So not only was your video helpful and informative, but yours is the only one that also included a recipe for soda bread.
    I modified the recipe some, as I picked and chose what I wanted from several different recipes.
    And man, this recipe knocked my socks off! Both my wife and I were astounded at how good this tasted. The bangers were much milder than the sausages usually available here in the U.S., and that mild flavor helped keep the coddle tasting the way it was supposed to. The store only had pre-cooked sausages, so the low-and-slow cooking process softened them up quite a bit, which worked really well for everything else.
    I also added a few chopped carrots and a few pinches of dehydrated thyme to the mix, as well as about 8 ounces of Guinness, and the whole thing came together in such an amazing blend of flavors. This pot made about 10-12 servings, so you can believe that we'll be making this again.
    The soda bread was also great - I appreciated the explanation of how to make soured milk, since I didn't have any buttermilk on me, and it helped. I also added a splash of Guinness to the dough, as I used a bit too much flour, and perhaps not enough baking soda. Still, it had a wonderfully hearty flavor that paired PERFECTLY with the coddle. My hat goes off to you, sir.

      I made it, aside from not really liking the texture of the Irish pork sausage? it was delish. in fact, there were no leftovers. lol.
      The texture of the sausage reminded me of what the meat baby food would feel like if you boiled it and it held it's shape. Not terrible, I"m guessing I'd have to get used to it
      The rest of it was finger licking delicious

    Last night I watched a very good doc about the tenements in Dublin. One of the things covered was Dublin Coddle. It sounded delicious and perfect for dinner on a cold January evening. Today i went shopping for the ingredients. Being a Yank, living in Ohio, I had a bit of trouble finding the appropriate sausage. My choices were breakfast sausage, Italian sausage, chorizo and German varieties. I decided to go with the only sausage I could get from the butcher, all the other sausages were pre-packaged at the factory. I ended up with mild Italian sausage, I'm sure it will be tasty. The only extra I added beyond the basic ingredients was carrots. Carrots are one of a few veggies my 9 year old will voluntarily eat. Also, carrots gave it a nice punch of color. My Coddle is cooking, should be ready shortly. It smells great. This will be my 1st Dublin Coddle.
    Soda bread isn't available in Ohio as far as I know. I bought a loaf of fresh sourdough bread from the bakery to go with the meal.

    Looks really tasty. I've noticed that in countries like Ireland, England, Scotland and Wales that have no real cusine like France or Italy we had and have regional variations of similar dishes due to a lack of sauces and limited seasonal ingredients before the advent of importing all the wonderful array of produce from sunnier climes , but what we do have in these islands is fantastic produce which has led to our mothers, grandmother's, great grandmothers ect passing on traditional recipes which may have been altered slightly at any point in the journey and they become the dishes we become so (rightly) precious about. My Mum made the best steak and kidney pudding and fish pie I have ever tasted but my Nan's (her Mum) who she got the recipe from in an old hand written recipe book my great grandmother put together. Her steak and kidney pie and fish pie were poor 😕to say the least yet apparently they followed the same recipe? So there's a lot to be said for the skills of the cook I think.

    Ingredients are spot-on. It doesn't need peas or carrots or tomatoes like some people say. No... sausages, rashers, onion, potato, parsley, ground pepper and chicken stock ..just perfect. Next time Keef, go old-school and don't sautee the meat first. Hardcore coddle is boiled from scratch, on the stove in a pot. ..but your ingredients are just perfect!

    Hi just found your videos. Being an American I am never sure what sausage to use. I have eaten sausage in England and Scotland ( still wanting to visit Ireland) and know what their sausage is like. Here in the states sausage is a bit different. So are we talking about sausage you serve for breakfast or sausage you serve on a bun?

      You need to use sausage that's in a skin. Not really sure what you mean by sausage you serve in a bun, in the UK it would be the same thing but cut in half lengthways. There is one exception to the idea that sausage is always in a skin, and that's the Lorne sausage from Scotland . This is a flat square of sausagemeat: ua-cam.com/video/g_dA1Llo1U8/v-deo.html

      Hi Sarah - I can't believe I haven't already done this, I make fish pie fairly often. I looked at Jamie's version, not impressed. I'll put this on my list, might be a few weeks or months before I get to it though.

      Good on you, I never boil sausage before coddle- it's a waste! I skim off any excess fat at the end. It goes into a little jar where it congeals and then adds a pop of amazing flavour to whatever I cook next. Cheers!

    You had your soda bread mixture too wet Keef for the cross to work. A little dusting of flour after mixing it will make it easier to shape. My grandmother used to bake fresh a wheaten cob (Similar to a soda cob just using different flour) every morning. Best wishes from Northern Ireland ☘️

      It came out fine. You can't get bangers where I live so I used smoked pork/beef sausage. I added a stalk of celery because I think I would miss the taste if it wasn't in there.

    Key part of coddle you missed the spring onions also traditionally you dont peel the spuds, and the rubbish look of whole sausages is correct you just gotta pierce the sausage skin with a fork - your sincerely someone from ireland

    You don't need to cook the sausages beforehand. Leave them whole and they absorb the soup flavour. It's good if you can cook it with a soup that's already cooked in a ham. Try that!!

    Not a coddle, sausages do not get browned and the go in whole, if using bacon rashers they should be rolled up and put in whole, cook slowly on the stove

    That is def NOT a coddle. It’s some sort of strange stew. Not saying it won’t taste nice BUT coddle is, was and always will be WHITE and stew is brown, unless it’s a chicken stew. You say leaving sausages is “just wrong” sorry my friend but it’s you who’s wrong, coddle always has whole sausages while cooking. If you want a true coddle get an Irish person to show you how.

Lorraine, no matter what you cook, where it's from, what's in it - you will never get two people creating an identical dish (unless it's something industrialised and mostly factory-made like a Big Mac).

      @@Keefcooks to be honest I’ve tasted a variety of English sausages of the years, trips to the UK, restaurants, cafes, Etc, I’ve found certain brands to be a little over powering, with other ingredients, pepper, garlic, ginger. Personally it’s just not my taste, but that’s just a personal choice. I do find that an Irish sausage doesn’t have these ingredients, which I find a more suitable sausage for an Dublin coddle, being from Dublin and have had this dish made by my grandmother and my dad, now I’m making it for my family. Your dish does look nice, but I just think, if your going to make a traditional Dublin coddle, your need Irish ingredients. That just my thoughts.

      You slightly missed the point - I have a global audience so there's no way I'm going to say 'you can't make this unless you have actual Irish sausages'. As for authenticity, this is one of those recipes where everybody's ma makes the best coddle so it's a complete no-win situation. 😀

    As a Dublin born head chef that’s not a coddle not even close please don’t say it’s Irish if it’s not and it’s rude to pass remarks on how the sausage in done in our dishes especially when you don’t know how to make it in the first place

      Well, Elsa, I watched lots of videos of Irish people making coddle before I did this. If we're talking about rudeness, I think it's pretty rude to suggest something isn't what you think it should be without offering any remarks on how you reckon it should be made.

      And so,it began. And it still rages today🤣
      Seriously, i think your dish looks tasty,
      I'd have some,no problem.
