I'd call it a 3x3 version of the Skewb, as it only has 2 parallel cuts for each axis, like the default Rubik's Cube.

Every cube, where the full path to solution can be deduced from its initial state, can be "easily" solved blidfolded. I don't think there is currently any method known to deduce this full path to solution for a latch cube. But this is rather a question of mathematics and group theory, than of cubing skills.
