Raised on a farm, we have fried eggs. I never had a poached egg. Here I am at 11:30 at night, come across you video and think I got to try it. Being we get about 35 eggs a day. I had a few eggs only hours old! 1145 I poach 2 eggs, Delicious! This is definitely top of the menu now in the mornings, or a midnight snack😂
Fried eggs are so good, I love crisping up the edges of the white and still have a runny yolk. But when it comes to Eggs Benedict poached eggs are the way. I bet your beautiful farm fresh eggs were perfect for this. 🙂
holy dung. It's 11:39 at night for me and Imma do the same thing lol. So I did 2 one after the other. My first one was ALMOST perfect in terms of shape. It was a nice solid single lump, but once I put it on a plate the yolk just kinda slipped out of hte whites even though they were solid. I decided 3 minutes wasn't enough, or I didn't make it hot enough. My 2nd attempt had a better consistency but I botched the egg drop somehow because after plopping it in the water it kinda drifted away from the center of my little swirl and ended up swirling all over streaking white all over. Probably could have used a wider pot I guess so as make the center a larger area to correctly hit or something
discovered the ladle method a few months ago, brushing the ladle with some olive or veg oil, parcook it for literally 10 seconds, then dump the egg in. works every time and looks perfect!
Crack 1 egg into a shallow cup filled with cold water so that the water is a finger level above the egg. Add a pinch of salt. Microwave for 1 minute (approximately). Done. Sorry to be a spoil-sport but this is not rocket science.
Thank you! It's so nice to have a video dedicated just to poaching an egg, even though you have instructions in your Eggs Benedict recipe. This way we can go straight to the eggformation we need😄
@@marysmith8638 Nope: Crack 1 egg into a shallow cup filled with cold water so that the water is a finger level above the egg. Add a pinch of salt. Microwave for 1 minute (approximately). Done. Sorry to be a spoil-sport but this is not rocket science.
I just used a ladle to poach an old egg. I did not remove the egg from the ladle for a couple of minutes. It worked perfectly. I will now use this method to poach eggs. You tried just once. You did not try any variations. You just pronounced the method as poor. I expect better. Making judgments based on insufficient evidence is not what you should be promoting.

spot on instructions - no nonsense ! and on my first attempt with your instructions i made the most gorgeous poached eggs using the traditional method, so thank you because i will be cooking my eggs this way for the next month (bare minimum)!

Since learning to poach eggs, I generally have it for breakfast daily. It is a good reminder to have a time frame for the egg to cook. I don't usually vortex because I do two at a time, but it does look much better - using the vortex method, that is.
I have tried so hard to poach an egg for years and I’m just not talented enough!😢 my mom loves poached eggs so much so I try! This may help thank you!❤️
I used to follow you religiously, then I had to go gluten free and stopped for awhile. BUT.... as I learned more and more about how to live and cook/bake gluten free, I have learned that I can adapt many regular recipes to accommodate my healthy requirements. Now I'm back to following you again and enjoying your recipes as I adapt them to being gluten free. This video was easy as making the egg needed no adjusting, I just need to put my egg on a gf piece of bread or english muffin. I am so happy to be back enjoying your videos!
How to poach an egg: First, you wait until the farmer is asleep. Then, carrying along a small container of 3-in-1 oil, you dink the hinges of the gate leading to the chicken coop ...
The eggs turned out wonderfully. I always wanted to make poached eggs and they never turned out, until now. Thanks so much for sharing this method. Now I can finally make eggs sardou!
John Kanell, I love your blog, U-tube and books. In fact you're the only one that speaks distinctly, explains exactly and is 100% entertaining. I would love to see you have a TV show. Prime time of course. Food Network Channel eat your heart out. P.S. I'm 87 and have learned to cook through your instruction.
Thank you for this, I enjoyed three delicious poached eggs after I couldn't fall asleep. They turned out fantastic after I followed your instructions. 😊
To hold egg whites together, when you take your eggs out of the fridge, place them in a bowl. Run hot water over the shells for 1 minute and let stand for 2 minutes. Crack your eggs into water that you added vinegar. Egg whites will stay together.
I always use the half white wine vinegar half water method. Leave the egg for 10 mins in the solution and then cook it in simmering water. I can cook multiple egg at the same time. It comes out perfect every time. Perfect shape and DOES NOT taste like vinegar at all!
I just love watching you John! I’ve poached before but never tried the water vortex. Also, I’m going to make a real effort to use very fresh eggs, straight from the hen. ❤
Saw this from Jeffrey Zakarian take a coffee mug fill it halfway with water crack the egg in the mug with the water and microwave for 45 seconds to 55 seconds depending on how much you want it done. It comes out perfect every time it’s just that easy.
Thank you! I tried the basic swirl version and it worked fine, since I had pretty fresh eggs. I'll try the strainer version too when I have less fresh eggs in the future!
Thanks for the info. I recently tried the half water and half vinegar idea. I can't recall it having a vinegar taste. I think you have to watch the amount of time that they sit in the mixture. The advantage is you can do a few at a time unlike the swirling idea.
Thank you for this. I always thought i was doing this right but it never looked like the pictures id seen or anyone elses. I wasn't actually doing this correctly. Appreciate your videos. Thanks!
Omg!!! Ive had or thought to have a poached egg but felt froggy with extra time today before work. They turned out perfrct!! Thanks soo mucho. Video was on point.
Try this. Get a small bowl, and some saran wrap. Lay the saran wrap in the bowl, add your egg, and then lift up the saran wrap around it. Hold it there with a clothes pin or elastic band. Toss that in the water. You can also spray the saran wrap with some cooking oil. You get a very decent shape and no lost bits of egg.
I tried your preferred method of poaching eggs today! They were delicious and I can't wait to wake up tomorrow morning so that I can make poached eggs again! I do have one confession and one question about the technique. First, I didn't use a deep enough pot, so I didn't get a really deep vortex and my eggs were not the best looking, even though they still tasted great. I'll do better next time! My questions is: does egg temperature matter? Should I put the eggs in cold or let them warm up a bit before poaching them? Thank you for the video!
This worked perfectly (the traditional way). Even my older eggs did great. My only mistake was spinning the water too fast. I had them with grits I made imitating part of your shrimp and grit video. Awesome.
You need to try the microwave hack. One egg in a ramekin, cover with water to 1/2”, microwave on high for between 35-50 seconds (depending on the power of your machine). Perfect every time.
In a perfect world we would all just go to the backyard for a "Farm Fresh Egg" whenever we wish or drive to a local farm and have "Farm Fresh Eggs" gathered that same day. However, the vast majority of people purchase eggs at a grocery store because that is what is most available. Draining an egg in a fine mesh strainer for a few minutes works smashingly to deal with the watery stringy whites. It is appreciated when the reality of getting food is recognized by chefs and professional cooks.
Could you PLEASE create a video going over your copper pots/pans and how to find quality brands? Maybe a full series going over all kitchen tools that are your go tos? I'm revamping my kitchen and having a hard time figuring out where I should invest (why I'm hoping you could go over copper!). ❤
Thanks man, 2 out of 3 went well with the classical method. I broke the yoke on one of them when cracking them open, but managed to salvage that one, the other ended up being in there too long.
Make sure the egg is at least room temperature, not cold from the refrigerator. If necessary, warm it up a bit in a bowl of warm water. Cold eggs need to absorb more heat from the boiling water, leaving more time for the whites to spread out.
You don't really need vinegar, you're right. Once you've poached a few eggs it becomes so easy. I actually use more water than that and create bigger whirlpool. I also watch it, vs. time it. The slotted spoon is key - I'll ease that under when I'm sure it's close and it allows me to lift and look and slowly put back in until it's fully cooked. I also have some paper towel where I'll leave my slotted spoon for a minute to let the water drain off. I usually only make 1-2... so I have no tips on mass production lol!
If you use the 50/50 vinegar water hack. It does not taste like vinegar if you leave it less than 10minutes ... this hack consists of preparing the mixture apart and drop craceked egg in, white will start to turn opaque, at about 10 minutes transfer with ladle to simmering water, no need for vortex , egg will cook in about 3 minutes , really nice and clean
Which is great if you only want to poach one egg. I was with someone who cooked breakfast for a few ppeople poaching eggs this way. The first person to get their egg (with bacon) was happy. Everyone else had cold bacon and it took ages.

If you want to save time, you can fry them using a really good nonstick pan, but cook them with water instead of oil/butter. Perfect every time.
