You've inspired me to buy a camp Dutch oven and I made the roasted chicken and veggies tonight. It was amazing! It cooked in just over an hour and was very easy. Your channel has also inspired us to get a travel trailer!
A suggestion for the rub is to experiment with smoked paprika. It adds a lot of flavor, especially if you're only using a gas grill or the oven. You don't want to replace your regular paprika with it, it's too strong for that.
Adam if your looking for a chicken cooked with rice recipe look up "Chicken Biryani". It's a great indian recipe that you could try adapting for your camp oven!
I have one of those rectangle smokers, when I smoke chicken, ribs, etc. I always put a thick pie pan full of vegetables and chicken broth below the meat. By the time the meat is smoked the veg are done. Pretty similar to this one pot cook. I'll have to give this chicken recipe a try for sure.
Hard to beat a pot meal like that. Your beef butcher you use might have a source for Capon chickens. Try one of those if you want to see how tender a whole chicken can get. They tend to be larger in size than your average whole chicken however, they are much more tender since they have been castrated when young. Get some navel oranges and fill the cavity with quartered oranges. The taste is amazing and navel oranges only because they don't have seeds. Those heat deflectors are a great idea. If they don't work as you want them to, maybe rather than a round hole an elongated or oval hole might work with the elongation following the radius of the bottom to match the curve of the pot. I've seen those in the past on very old stoves. Still wondering about the vent on this Camp Chef vs. the Lodge and other brands not having one. BTW...your mic seems to be just about perfect in this video.
155F is fine as long as you maintain that temperature or higher for about 1 minute. When I use my smoker the temp will sit at 155 for a good 5 minutes, and we've never been disappointed with the outcome.
A little tip. If you wanted to make something in your oven that could be a p as in to clean. Line it with aluminum foil. Judt be careful scooping things out of it. Also if you dont know. Putting 3 same size stones in the bottom let's you bake cakes or pies and such in it. You want the stones to keep the pan off the bottom. A camp shovel works great to get the pan out.
For some recipes that works great. I’ve used it for a few cooks. I don’t normally have sticking problems with my cook. Every time I go to wash the pot out I’m always amazed at that nice oily surface thats comes clean with ease.

Lot's of other good topics to discuss rather than criticize one for the brand of cast iron they have. Just so you know when I was in the market and wanting to buy new, I tried to get Lodge and they were always out of stock. In case you missed it, I recently shared a video of a 12" lodge dutch oven I bought used and cleaned up. In fact I have lot's of Lodge cast iron that I have not shown.
Put some shallow drill marks in the plate to line the legs of the pot up with the plate. You should use a plastic cutting board for meat and meat only. It is very hard to clean wood boards
Telling someone they “shouldn’t” use a wooden cutting board, might as well promote that to the whole wood board cutting world! I’ve never once had a problem cleaning up my wooden cutting boards with soap and water.
I know you have commented on some of your videos the name of the meat market you get your steaks, etc. from. Mr..? is it truely safe to use dutch oven on gas stove? because cast iron continually absorbing heat and it could be downward to effect stove top... actually I am good at using douch oven n will start to use it from the day I buy it on black friday...
First time viewer. When I saw you put the partially cooked chicken back on the cutting board still wet from the raw chicken juices I stopped watching. You have nothing to teach me. I'm surprised you haven't succumbed to food poisoning by now.
He explained that...plus the chicken goes back for 9/10 of its cooking time after it touched its own raw juices. He washed The cutting board completely after, there's no problem in the video here.

You should weld some 5/8" or 3/4" nuts to the plate to help locate quicker and keep it from sliding if someone bumps it.
I actually thought about doing that, but I won’t use hex nuts, gotta machine something! 😂

I'm surprised you don't use a laser thermometer. Or you could use one of your welding temp stick and test the side of the oven.
Think of any negative to using cast iron pans for everyday (literally) cooking? Say breakfast with eggs and meat then dinner with steaks?
