@@lilblackduc7312 you can use really any acid. So what I would do is increase the lemon juice and mix with chicken stock. It won’t be the same but it would still be delicious. Wines work as an acid in the food which is a flavor enhancer. You can get that from lemon juice and then the chicken stock would create essentially a pan gravy. Congrats on being sober, and never think a dish is out of your reach because you avoid the booze! Enjoy cooking and god bless.
My GE microwave from 2005 finally crapped out. At first ua-cam.com/users/postUgkxO_Bc204MGjxDl87cOKcdgaRhzSqGmv_g I was unsure because I was looking for something with the exact same features. Found it with this one. Interior space cavity was large, but the outside was smaller than my old one. I love the one-button push for 1-6 minutes, and the 30 second add or 30 second start. and MOST IMPORTANTLY, I love how you can adjust the power level during cooking. The reviews said it could not be done, but this marked all the other boxes. and happy to say, it does. I can hit 1 minute start, and change the power level from 10 to 5, 30 seconds in, without interruption. my favorite feature!
Im an old Southern fella and when a watch Kent, Shannon and the four-legged people, it just takes me home to a time when Mom had the most wonderful smells in our kitchen .
The old wood- farred Queen Ann was cherry red and all us kids done with chores and washed up.
Dad would come in and it was Sunday or Saturday in the South.
We didn't have much but we never lacked for anything.

I'm going to try this recipe with Cornish Hens. I'm just cooking for myself. A little trick if you don't have twine or fencing wire is to cut a slit on each side between the thigh and butt flap. then tuck each leg into the opposite side slit. It also helps hold the butt flap up.
This is my favorite chicken. My wife and I make it like this. We normally use our convection. Run it at 350 for 35 minutes on the halfs. Kick it the rest of the way in the cast iron. I never rinse chicken. Always brine em. Torch on the pins for the win. I fry my steaks too, get a better sear and crust, no steam.Beautiful set here.🐸🍺🔪🔥

My mother used to put a frozen bag of lima beans in the bottom of the roaster around the chicken, and the beans cooked in the chicken drippings were out of this world!

Best looking chicken I've seen in a long time
We rinse our chickens, but, we also help the neighbor butcher the birds and he recommends that we do rinse them before cooking. My question is, what is a 5 lb chicken? The last 2 small chickens we bought came in at 10lbs dressed. We also got a couple of large chickens that weighed 13 lbs dressed.

I always wrench my chicken, I clean my sink good before I mess with chicken, then I scrub and sanitize Everything afterwards.
And if I had dropped the roasted chicken while cooking, I would have wrenched it off again and put it back in the pot. Good job Kent.

Most folks mess up baking chicken by not basting it.
Salt brine is good too, but you can add thyme, rosemary and garlic to a brine, or any herbs and spices.
Don't know why folks are scared to add some seasonings to a bland yard bird.

Ken don’t feel bad about spilling the chicken…years ago at the family Thanksgiving dinner I was carrying the turkey to the table and it slipped off the dish and under the table..I was so embarrassed but we picked it up, after the laughter stopped, wiped it off and moved on to the feast .
