    Just made your squash casserole for a potluck & everyone loved it! I added roasted pecans,also roasted the quinoa. I ate leftovers for breakfast. Healthy, delicious recipe,thank you for sharing. You are a natural born teacher!

    I’m going to make mine with couscous instead of quinoa, and will add in dried blueberries, diced apples, and toasted pecans instead of the pumpkin seeds. Can’t wait to try this!

    I shared this with my sisters & nieces, but I told them that I was bringing it for Thanksgiving😉 I got 100+ acorn squash from just 3 hills. No vegetarians this year, but great option👍my nephew said his wife might make it for herself. Told him to stop & get some squash 😆

    I think this sounds so good Caleb! This is going on my list of "must try" recipes. There's even an acorn squash in my refrigerator right now! I went out to dinner last night and my halibut was served with a butternut squash risotto. It looked gorgeous but it sorely needed your touch. The idea was fabulous but it was lacking garlic, parmesan and seasoning. If you would come up with a recipe for that it would be on my list too! I love your channel and I'm grateful for my special friend Karen that shared one of your recipes with me. Many blessings to you and your as we approach this holiday season! ❤

    Last fall, Mr. Squirrel nibbled at the acorn squash in the fall display on my front porch. Little did I know that he wasn't just being a pest. Come this spring, I had acorn squash plants growing in my front yard landscaping, because he apparently planted the seeds there. I harvested six acorn squash this fall, thanks to my bushy-tailed friend. And now, thanks to you, Caleb, I have a new way of enjoying my squash. Can't wait to eat my unstuffed acorn squash stuffing.

    I am a great fan of yours, Caleb. I love your recipes, gardening and decor videos. Although, I do suggest that if you want us to eat the “skin” of vegetables that you call it the “peel”. 😉

    Tried the grapefruit spoon trick tonight. Worked a treat. Much easier than a regular spoon.

    I literally made similar it yesterday but with roasted butternut. I throw a handful of fresh green beans in with quinoa to cook then place butternut on top. Its a favorite and available year round. Love your idea!

      You can always peel your squash. That’s what I do😄 cause I don’t like the peel either.

    If you’ve never eaten the skins, you should try a little first to see how your digestive system handles it. Some people get a severe stomach ache from skins of vegetables.

    It looks dry, to me! 🙄It needs mushrooms for some moisture and flavor! I didn't see you add much for seasoning either. For my liking, this recipe looks delicious, however I cook a lot and it just needs some sauce!
