Just made your squash casserole for a potluck & everyone loved it! I added roasted pecans, also roasted the quinoa. I ate leftovers for breakfast. Healthy, delicious recipe, thank you for sharing. You are a natural born teacher!
I’m going to make mine with couscous instead of quinoa, and will add in dried blueberries, diced apples, and toasted pecans instead of the pumpkin seeds. Can’t wait to try this!
I shared this with my sisters & nieces, but I told them that I was bringing it for Thanksgiving😉 I got 100+ acorn squash from just 3 hills. No vegetarians this year, but great option👍my nephew said his wife might make it for herself. Told him to stop & get some squash 😆
I think this sounds so good Caleb! This is going on my list of "must try" recipes. There's even an acorn squash in my refrigerator right now! I went out to dinner last night and my halibut was served with a butternut squash risotto. It looked gorgeous but it sorely needed your touch. The idea was fabulous but it was lacking garlic, parmesan and seasoning. If you would come up with a recipe for that it would be on my list too! I love your channel and I'm grateful for my special friend Karen that shared one of your recipes with me. Many blessings to you and your as we approach this holiday season! ❤
Last fall, Mr. Squirrel nibbled at the acorn squash in the fall display on my front porch. Little did I know that he wasn't just being a pest. Come this spring, I had acorn squash plants growing in my front yard landscaping, because he apparently planted the seeds there. I harvested six acorn squash this fall, thanks to my bushy-tailed friend. And now, thanks to you, Caleb, I have a new way of enjoying my squash. Can't wait to eat my unstuffed acorn squash stuffing.
I am a great fan of yours, Caleb. I love your recipes, gardening and decor videos. Although, I do suggest that if you want us to eat the “skin” of vegetables that you call it the “peel”. 😉
I literally made similar it yesterday but with roasted butternut. I throw a handful of fresh green beans in with quinoa to cook then place butternut on top. Its a favorite and available year round. Love your idea!
yet another great dish - yee haw !!! I do love squash and will definitely give this one a try. As always, thanks for sharing your ideas, recipes, enthusiasm and inspiration !!!
I just crossed over to the eat the skin side!! Delish and less waste!! This casserole looks like everything I want to be eating in November 🍁🍂🍁🍂 ya think I could swap farro for the quinoa??
If you’ve never eaten the skins, you should try a little first to see how your digestive system handles it. Some people get a severe stomach ache from skins of vegetables.
It looks dry, to me! 🙄It needs mushrooms for some moisture and flavor! I didn't see you add much for seasoning either. For my liking, this recipe looks delicious, however I cook a lot and it just needs some sauce!
I'd love to see a video of you cleaning your pots & baking sheets. They ALWAYS look brand new.
“I did it for beauty”. This is a lovely way to live.
You make the best fall and winter meals. Your meals are healthy and well rounded. I love your kindness and the way you teach.

This was the best stuffing I have ever made! Wow, the lemon, the fetta, the parmesan, wow! Absolutely wonderful.
I bet pecans would be good in it !! I'm from Georgia we put pecans in everything !
Pecans elevate most anything

Love a casserole! Also, I can’t get over how approachable and cute you are while being educational. I adore your content style.
Beautiful recipe.
I had not thought about using quinoa in a stuffing type casserole.
Good idea.

Awesome recipe. Never cooked and eaten the squash peel. So looking forward to your Christmas videos.
You make my day! I love the view through the windows, when you’re cooking on that side of your kitchen. 😀

I never knew the squash skin was edible. 😳 This looks so pretty and festive. Will have to give it a try.
Tried the grapefruit spoon trick tonight. Worked a treat. Much easier than a regular spoon.
This is an awesome recipe! I can’t wait to try it once the weather changes and cools down.

Caleb.... I love that biblical name....!
Unlike the Bible, he spells his with a K.
Love your videos
Rinse the bitter saponins from the quinoa for even nuttier flavor.
Do you ever toast your squash seeds for salads or a soup topping? By the way we love your recipes
I'm making this
Yummy, I have a question ❓ I love your knives, what brand are they.
Have you ever used flaked salt? It’s a game changer over Kosher
Do you think chicken can be used in place of the sausage? This looks so yummy! 🙂
Can’t get past eating the heavy waxy squash peel! EEK! 😂 oOther than that one thing, this looks amazing!
You can always peel your squash. That’s what I do😄 cause I don’t like the peel either.
Yummy 😋
Awesome that you encourage people to eat the outside of produce. So much nutrition is wasted when thrown out.
Delicious!nn

Check out Redmond's real salt from Utah.
What’s the size of three ribs of celery?
You can probably even use apples if you don't have cranberries
chestnuts would be good in that... Again, no garlic for the delicate
Use Orange instead of lemon
goat cheese for me
