Kabocha skin is edible, kabocha no nimono is a Japanese simmered dish (amazing btw) and you keep the skin on and you also eat the skin. I have also roasted this and fried this every time keeping the skin on and it is very good and delicious.
people make cooking winter squash more difficult than it needs to be, also all the recipes make a lower quality end product than the easiest way to cook. just put the squash near heat, the heat can be a fire or an oven. cook it until its tender. in most cases if you cook it long enough and burn the skin it actually makes it better as the flesh caramelizes. after its done cut it in half and salt and butter.

We love Winter Squashes . From Soup to Gnochi, from Pie to Muffins they are amazing. We eat them as filling in Pasta or filling for a Cornish Pasty with it instead of Potatoe. There are so many variations as there are recipes. But the best part is they are cheap, easy to roast and even kids love the sweet flavor.
I decided to dive into squash a couple years ago. Now, I look forward fall to have them. The cheese squash is something I didn’t see here in Montreal. Will definitely try to find some!

I microwave my squashes. Stick it with a fork or knife a few times to let the steam out, 20ish minutes in the microwave depending on size and it is fully cooked. Cut it in half, let it cool a bit then the seeds come out easily.

So, I planted some seeds from a Japanese pumpkin and acorn squash. They grew many pure white acorn squash! I have learned that white acorn squash was created in the 1990s….but,some were regular looking Japanese pumpkin and green acorn….then those seeds planted grew some white regular looking pumpkins 🤷♀️ Anyone hear of that,before? We've always eaten kabocha skin. It turns really nice and tender when you cook it, a similar quality as the flesh of the squash itself.

Yup! We Filipinos call it "kalabasa", and when they're stewed long enough like in pinakbet or even a malunggay stew, the skin can be just as tender.

Delicata and kabocha are the sweetest. Kabocha is drier and I prefer that to mushy. The acorn one is really mushy.
pumpkins are really great if you add it to beans, Caribbean style (Cuban, Dominican or Puertorican style).
I sometimes eat butternut squash skin. It's not too tough if you cook it well.

You can make kabocha tempura. Just cut it (with the skin) into slices about 1/4 inch thick, dip it in tempura batter, and fry it for a few minutes.

Delicata squash don't keep as long as other winter squashes, that's why they are more prevalent at farmer's markets.

See Shun Beng, either way works. Steam keeps more healthy vitamins in the squash, but if you boil, you can use that water to start soup.
