How to Make Fresh Elderflower Cordial | Rosie Foodie

  • Elderflower is one of my favourite summer ingredients. Last week I uploaded a video of my foraging walk with East London legend, John the Poacher, including this recipe for making fresh elderflower cordial. It's so easy and so delicious that I decided it was worth a video of its own, so here it is!
    It keeps up to 6 weeks in the fridge by which time it should have fermented into a slightly sparkling, very syrupy wine.

    Ingredients:
    500g (1lb 2oz/generous 2 cups) golden caster (superfine) sugar
    zest of 2 unwaxed lemons, the lemons sliced into rounds
    20 heads of elderflower

    Great vid Rosie, short and informative, did you know there are pink Elderflowers! I have been searching for many years for this elusive shrub/bush and have never come across it and I spend a lot of time in the countryside, anybody in Derbyshire know where it can be found?

      I once found a bush of the Red Elder at a church in Edinburgh. I ended up making a batch of cordial with it. Super Gourmet haha. I have seen it around after that too

    Why sterilize the pots if the elderflowers are not sterilised and the cloth in which you filter is not sterilized? You use cooled down liquid too, which will have live bacteria in it.

      I normally submerge them in water for a short while and stray bugs and things will float to the surface.

      Apparently you shouldn’t wash the flowers, but leave the cut flowers out on a surface for about half and hour and the bugs will come off themselves, as the pollen is good for you

    So I wash the elderflower first to get rid of the bugs… should I not have done that?

      Apparently if you wash the flowers you remove the pollen which is not a good idea. I guess the pollen is good for you 🤷🏼‍♀️

      If you leave the elderflower out in the open air for about an hour the bugs will all crawl off. you need to sive after it has steeped so any nasties will be caught
      in the muslin after x
