  • Ingredients:
    2 cups all-purpose flour
    1/3 cup granulated sugar
    1 tablespoon baking powder
    1/2 teaspoon salt
    1/2 cup unsalted butter, cold and cut into small cubes
    3/4 cup heavy cream, plus extra for brushing
    1 large egg
    1 teaspoon vanilla extract
    1 cup fresh or frozen blueberries (if using frozen, do not thaw)
    Optional: coarse sugar for topping
    Instructions:
    Preheat the oven: to 400°F (200°C). Line a baking sheet with parchment paper.
    Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    Cut in the butter: Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.
    Combine wet ingredients: In a separate small bowl, whisk together the heavy cream, egg, and vanilla extract.
    Mix the dough: Pour the wet ingredients into the flour mixture and gently stir until just combined. The dough will be slightly sticky. Do not overmix.
    Add the blueberries: Carefully fold the blueberries into the dough.
    Shape the scones: Transfer the dough onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into an 8-inch (20 cm) circle, about 1-inch thick. Cut the circle into 8 wedges.
    Prepare for baking: Place the scones onto the prepared baking sheet, spacing them apart. Brush the tops with a little heavy cream and sprinkle with coarse sugar if desired.
    Bake: Bake for 18-22 minutes, or until the scones are golden brown on the edges and a toothpick inserted into the center comes out clean.
