OnlyCans - I Cooked a 3 Course Meal Using ONLY Tin Canned Food

  • Can (pun intended!) you really cook a delicious 3-course meal using just tin canned food? I gave it a go! Watch as I create a starter, main & dessert from some pretty simple staples - all in a tin can. It’s fun, creative, and surprisingly tasty with a little magic disappearing food along the way ;)
    Ingredients:
    Chicken & Bacon Chowder
    1 can potatoes, diced, reserved the water
    1 400g can cream of chicken soup
    1 small tin sweetcorn, drained
    1 tin of Bacon spam, cut into small cubes
    Salt & Pepper to season
    Spaghetti Meatballs
    1 tin meatballs in tomato sauce
    1 tin chopped tomatoes in herbs
    1 small tin sliced mushrooms, drained
    1 tin mixed vegetables, drained
    2 tins spaghetti in tomato sauce, drained sauce reserved
    Tropical Pavlova
    1 tin chickpeas, water drained and reserved
    120g caster sugar
    1 tin pineapple slices
    1 tin apricot
    1 tin coconut milk, drained
    1 tin caramel

      Spaghetti hoops on toast is my comfort meal too! If you don't already put a bit of paprika, garlic and pepper into the spaghetti - it just levels it up a few notches.

    The reason the first batch of chickpea meriunge dissapeared is because pinapple dissolves protein, and it's the protein in the chickpea liquid that makes it able to be whipped up like eggwhites in the first place. Really fascinating reaction tbh, I think adding any other fruit juice wouldve worked better XD

      I thought only fresh pineapple had the enzyme that dissolved protein. Isn't tinned pineapple safe?

      @@badcatbad Canning does destroy the bromelain, but the extra liquid seems to be the culprit. Quick google shows that even adding liquid food coloring can possibly throw off aquafaba meringue.

      @@lordofthenotes now that you mention it, I think this does happen with real egg whites as well - flashing back to the first time I attempted to make macarons, and I had to add so much gel food colouring to get it to be visible that the added liquid turned my peaks into soup. I think I'd repressed that memory XD

    Top tip to help with the chickpea meringue. To help stabilize the aquafaba (chickpea water) try using cream of tartar when whisking as it will help hold the peaks when cooking

    I use tinned potatoes all the time. Fry them or put them straight into the air fryer with some Italian herbs and smoked paprika 👍

    The first attempt at the meringue made me literally laugh out loud. Like belly laugh. The second attempt made me want to use my chickpea water to make meringues for the rest of my life. Thank you for proving it can be done!

      @@amarenee2020 most likely a mix of adding extra liquid (which is sweet but also acidic), and not adding sugar. Sugar (as in sucrose, I mean) has a stabilising effect on protein foams (which is basically what both whipped chickpea water and whipped egg whites are - a whipped mixture of water and proteins). So without the real sugar added, the chickpea foam was way too unstable and simply deteriorated in the heat. The second go around he added in sugar, which stabilised the foam (creating a meringue when baked) but also made it taste nice!

    Spam, tinned potatoes, chicken soup, Fray Bentos meatballs and tin after tin of chopped tomatoes was exactly what I was getting in the disabled persons Government food package during Covid. Wish you'd done this back then, lol!

    Pineapple juice has an enzyme in it that breaks down protein molecules. That’s why it’s used to tenderise steaks etc.

    I find the tinned potatoes handy for making slow-cooked stews, chopped up and tossed into the mix with seared meat, seasonings and tomato stuff and left to become awesome in the slow cooker, very low-effort stuff... :D

    Fried spam as part of a cooked breakfast (cut in slices) delicious
    Drain the potatoes well then fry them in a pan with chopped leeks bacon and spicy chillies.....lovely.

    Can’t find it but there was a post that mentioned how most canned foods are high in sodium.
    A good reason to rinse most of the foods used today (except for impossible ones like soup or sauce).
    And not add more salt when you prepare your dishes.

    Introducing Bromelain - the protein digesting enzyme found in pineapple!

      You're correct, but only sort of! The processing involved in canning pineapple actually breaks down bromelain (which is mostly found in the core of pineapples, anyways, which are removed in canned pineapple). So the amount of bromelain in canned pineapple juice is minimal, if at all present. The real culprit is probably adding more liquid, combined with not adding sugar. Chickpea water has the same essential composition as egg whites (water and protein), but the stability of the foam is much lower than the foam made by egg whites. So adding sugar to stabilise the foam is even more important when using aquafaba!

    I make vegan “meringue” with chickpea water/ aquafaba all the time. Adding cream of tartar helps make it more stable if you do it again. So many people have tried mine and not realised it’s not egg whites and could not tell the difference. Then realised how much cheaper it is compared to eggs. Next time add cream of tartar and you won’t lose your dessert!

      as someone who is allergic to eggs, discovering aquafaba has been a total game changer!!
      and I have found that meringues made with AF tend to be crispier and tastier than those made with egg white.

    Love a canned meal. Chunky chicken in white sauce with tinned potatoes (or microwave rice if you're not going 100% canned), corned beef hash made with chopped-up canned corned beef, tinned potatoes and tinned carrots, plus because anything tinned is usually precooked, if you're cooking on a camping stove or you're just not very confident, there's much less risk of giving yourself food poisoning.

    Another wee hack you should try....use a "cup a soup" as a pasta sauce. Just use half the amount of water, then mix with plain pasta 👍 or use the correct amount of water, pour onto the pasta, sprinkle with cheese & do a pasta bake in the oven 👍

      I keep a pack of tomato flavour in the cupboard for this. If i run out of tinned toms I just use that and add my regular herbs and spices for bolognese or whatever.

    Hi Barry, This is great fun. I would have bought a tin of butter and fried the rinsed spaghetti in a bit of the butter to give it a cruncy texture and then put the sauce on it. Like a Putanesca. You omitted some tinned anchovies. Cooking tinned food a bit helps the flavor (as does adding at least half more fresh stuff but that was outside the scope of your challenge)
    This was great fun. I enjoy merengues but since I'm on a low carb regimen I still enjoy my eggs and cream.... All the best to you and the girls (including the Mrs of course) Jacques Mexico.

    My cousin taught me a great soup recipe. 1 can each black beans, refried beans, diced tomatoes with chilies & canned corn. Just add a little cumin & maybe onion flakes. I lived on it all last winter!

    A tip/trick I learned a while back with tinned mushrooms. Once you strain them off, sautee them for a bit with some salt. It will expel the excess water out of them, so when you add them to a sauce, they will pick up the flavor of the sauce. I personally don't mind the taste if I don't do that, but if someone you're cooking for doesn't like mushrooms because of the tinned flavor, this trick will change their mind.

    Hmm, did Barry really not realise that those were chicken meatballs? He kept saying beef. But that's the reason for the "mushiness" of it, chicken meatballs are less dense than beef.

    Nice job, Barry! These looked really good (especially the chowder). I wonder, if you could have boosted the flavour of the spaghetti sauce if you would have tried and sautéed the mushrooms and vegetables before adding the rest of the ingredients to simmer? You could have used the oil from the spam to not use another ingredient from the pantry, even. Maye try it next time?

    no bake refrigerator cheese cake. 237mL Cream cheese, 75mL Lemon juice, 414mL sweetened condensed milk, 5mL vanilla extract. whisk with stand mixer or hand mixer tell smooth. Pour cream cheese mixture into prepared pie crust. Refrigerate for 3 hours or until firm.

    That reminds me a bit of my student days, I always had all sorts of canned food in stock, when something was on offer and I had some money I always bought several cans at once. Sometimes the month lasted longer than the contents of my wallet, so sometimes a tin of lentil soup ended up in the pot at peak summer and I sometimes got really creative hehe

    You can make a decent chilli type dish mostly from tins, the only addition apart from spice I have is some chopped bacon and an onion.
    Fry chopped bacon, add chopped onions, add a can of corned beef and cook for a few mins as the corned beef will break down, add a little tomato paste (tin or tube) and cook out slightly, then add canned tomatoes, chilli powder and finally kidney beans (no salt needed as bacon and corned beef have enough). I would serve with rice though so suppose that's not tinned 🤣

    I use a bacon grill, which is a lot cheaper than Spam. The best way to cook it is thinly and most definitely dry fry it.

    Barry, to stabilize aqua faba, you can use cream of tartar. I would've added evap milk to the chowder, and left the veg out of the Bolognese. I love this episode--you're a food mad scientist!

    Don't knock canned food! You can get anything in a can, nowadays. A few weeks ago, I had some quail, and it was phenomenally good. SPAM is huge in Hawaii, and even the humble pilchard can be made into impressive meals.
    I have a cookbook by the thriller writer, Len Deighton, who was also a superb cook. His book contains many very high end recipes, using expensive ingredients - but he also encourages you to, wherever possible, use tinned ingredients. It's brilliant. If you are careful, you cannot tell that canned food has been used.
    And yes, you can get tinned clams - I have some in my cupboard, next to the jars of cockles, mussels, and tins of crabmeat.

    that chickpea water meringue was fascinating, I knew you could whip into a stable foam, I didn't know you could bake it!
    My guess it was the acid in the pineapple juice that caused it to fail the first time, but I have no idea really

      yeah, aquafaba is a common substitution for egg whites in quite a few things. I think Sorted did a show of utilizing it for a mixture of applications which were pretty surprising. One of them being mayonnaise!

    This was the hottest cold open I've seen in a while.
    I've been guilty of making a lunch that is just a tin of cooked meatballs and some buttered toast. Multiple times. But it was still kinda nice.

    Well this video is a "Can do" video 😂😂 and I think maybe u could add this to the student recipe playlist... Just a thought as they looked quite gourmet especially the chowder one and I suppose could put pastry on the top and chowder pie and I think meatballs spag bol needed some grated cheese on the top but overall definitely a canned success and maybe do some more as I definitely think this is such a great idea for quick easy cheaper recipes that can (haha) for anyone tbh and loved watching it too

    I don't like eating over cooked Spaghetti but it might taste better with fresh cooked Spaghetti than tinned. Good effort though

    This will be very handy to know next year when they hit us with the cyber attack and the power goes out. All you need is tinned food, and a single gas burner from the camping store. Get that pantry stocked with tinned food now.
