Hi, what is the size of the cutter's guide which you use? My MF 135 allrad need a full engine restoration also. I have metric seat cutter (7 and 8 mm cutter guides) and the valve's rod only 7.9 mm wide.
If it is important and they are out I would need to fit a new seat insert. Usually with new valves and a quick cut they stay within spec. Even if they are all slightly low but even I dont worry on these old engines.

If the valves have a 45 degree, why use a 46 degree cutter?

I think it was 5/16" from memory, it was a while back now.

Can you get over sized valves to take up the clearance?
Yes at times they are available and can be machined to size from there.
What about the valve heights off the surface of the head
